Today I am sharing a menu with some products from my town, I bought the tomatoes in a minimarket that is close to home, where we can get fresh products, since the owner has a farm. Tomaticos were on sale at $0.70 and they were brought down even further to $0.50; On the way home there was a man selling little bags of okra and pepinitos de monte, so I bought a little variety for the menu that I am sharing with you today, and I left others to later prepare a soup.
Hoy les comparto un menú con algunos productos de mi pueblo, los tomaticos los compré en un minimarket que está cerca de casa, donde podemos conseguir productos frescos, ya que el propietario tiene una finca. Los tomaticos estaban en oferta a 0,70 $ y me los rebajaron aún más a 0,50 $; ya camino a casa estaba un señor vendiendo bolsitas de chimbombó y pepinitos de monte, entonces compré una variadita para el menú que hoy les comparto, y dejé otros para luego preparar una sopa.
For today's recipe we will need | Para la receta de hoy necesitaremos:
Ingredients:
3 medium potatoes
7 mountain cucumbers
7 okra
6 small tomatoes
1 white onion
1 sprig of parsley
2 garlic cloves
Olive oil
Salt and pepper to taste
Ingredientes:
3 papas medianas
7 pepinitos de monte
7 chimbombó
6 tomates pequeños
1 cebolla blanca
1 ramita de perejil
2 dientes de ajo
Aceite de oliva
Sal y pimienta al gusto
Elaboration process / Proceso de elaboración:
🌷 I steamed the okra, because I wanted it to preserve its texture more.
🌷 El chimbombó lo cociné al vapor, porque quería que conservará más su textura.
🌷 With the potatoes I prepared a puree, I added a drizzle of olive oil, freshly ground black pepper, salt, and to soften it a bit I added a little water where I boiled the potato, you can also add any vegetable drink such as oats or almond.
🌷 Con las papas preparé un puré, le añadí un chorrito de aceite de oliva, pimienta negra recién molida, sal, y para suavizarlo un poco le incorporé un poquito de agua donde sancoche la papa, también le puedes agregar cualquier bebida vegetal como por ejemplo de avena o almendra.
🌷 To give it a touch of more flavor, I added the tiny chopped parsley and a touch of nutmeg.
🌷 Para ponerle un toque de más sabor, le incorporé el perejil picado pequeñito y un toque de nuez moscada.
🌷 To prepare the gherkins, I cut the onion into julienne strips, the tomato into cubes and crushed the garlic.
🌷 Para preparar los pepinitos corté la cebolla en juliana, el tomate en cubos y machaqué el ajo.
🌷 I sliced the gherkins so they cook faster, but when I use them for soups I prefer to add them whole.
🌷 Los pepinitos los piqué en rodajas para que se cocinaran más rápido, pero cuando los utilizo para las sopas prefiero añadirlos enteros.
🌷 Later I fried the onion with the garlic.
🌷 Posteriormente sofreí la cebolla con el ajo.
🌷 Lastly, I added the tomato, the pickles, salt, pepper and a little water, and let them cook over low heat for approximately 20 minutes.
🌷 Por ultimo añadí el tomate, los pepinitos, sal, pimienta y un poquito de agua, y dejé que se cocinaran a fuego bajo por aproximadamente 20 minutos.
