My kitchen colleague is still on her holidays so I'm assigned for all the staff meals while she's away. Yesterday I cooked a simple Chinese dish of chicken with mushrooms and a stir fry vegetable dish of pea sprouts with garlic.

For the chicken, I started with marinating chicken drumsticks with soy sauce and oyster sauce. While the chicken was marinating, I prepared the rest of the ingredients which is the mushrooms.

I used dried Shiitake mushrooms and soaked them in hot water to soften. Once they soften, I removed the stems and sliced them.

I then cooked the vegetables first as I wanted the chicken to marinate longer and absorb the flavors from the soy sauce and oyster sauce.

The vegetables are really easy to prepare. Simply sauté garlic until they are fragrant then the pea sprouts go in together with chicken stock and a little water. Cook for 5 minutes and the dish is done.

Now back to the chicken. I started with some oil and garlic to sauté until fragrant then added in some Lemongrass whole. Then the mushrooms go in followed by the chicken and it's cooked and simmered for 25 minutes. Stir constantly and some final seasonings of salt to taste and the dish is done.

I really love how the mushrooms flavored the dish to wonderfully and it turned out such a yummy dinner.
