👩🍳 I have a vegan recipe a lot to share with you all - Khmer Saraman Curry. It is very similar to Thai Massaman Curry.
We are like to cook this food when national holidays. It’s from Cambodian Muslims and Cham people. Usually we make it with chicken or beef a lot.
🍠 Saraman Curry 🍛 Vegan Recipe 🧅
- 1 sweet potato
- 2 onions
- 2 lemongrass stalks
- 1 small piece turmeric
- 1 small piece galangal
- 1/2 big red onion
- 5 cloves garlic
- 5 dried chilies
- 2 cinnamon
- 3 star anise
- 1 tsp coriander seed
- 1/8 tsp black pepper powder
- 1/2 tsp chili powder
- 1 tbsp soy sauce
- 1 tsp salt or to taste
- 1 tbsp brown sugar
- 1 1/8 cups coconut milk
- 2 tbsp tamarind water
- 1/3 cup roasted peanuts
- 1 cup water
- 2 tbsp coconut oil
Put dried chilies in water 10 minutes after clean it and remove seeds. Crush roasted peanuts lightly. Usually, I put mnay dried chilies, but here not have. Cambodia has big dried chilies so much and not spicy for make anything food.
Step 1Slice and chop ingredients.
Step 2Put lemongrass, turmeric, galangal, coriander, pepper, dried chilies, 1 star anise, little cinnamon, garlic, red onion and chili powder.
Add 2 tbsp water and grind it very well.
Step 3Heat oil, add spice paste and stir it.
Step 4Stir it until aromatic.
Step 5Put 1 cup coconut milk and stir it.
Step 6Then put star anise and cinnamon, simmer it a few minutes.
Step 7Put sweet potatoes, stir it and put salt, sugar, soy sauce, tamarind water, and simmer 5 minutes.
Step 8Then put onion stir it.
Step 9After put water and simmer a little.
Step 10Then put roasted peanuts stir and simmer 10 minutes.
Step 11After 10 minutes put coconut milk and stir, turn off fire.
This recipe food has so much ingredients but it’s really delicious and a very heavy dish.
