For a quick refreshing snack for today, Fresh tropical fruit salad. High in fiber and antioxidants. Packed with vitamins and nutrients.
Papaya, mango, guava and apple.
I decided to have a light dinner and made a Guacamole partnered with crackers.
Guacamole
Mashed avocado, tomato (medium size), garlic (grated or chop), onion, coriander leaves, lime juice and extra virgin olive oil.
- Dice the tomato and onion, chop the coriander leaves and add them into the mashed avocado with grated garlic. Stir well. Drizzle the lime juice and olive oil. Add a bit of salt , if you prefer. Mix well.
You can add chili if you want it spicy.
