Cauliflower Soup for Steemit Fruits And Veggies Monday Contest

I'm back with another soup recipe with just a few ingredients. These are easy to make and delicious regardless of the season.

You can make them in summer or winter as these ingredients can be bought all year round.

When you're having a soup and main course as well, the soup is better if it's a light one. My cauliflower soup has low calories.

Ingredients

  • 1 medium cauliflower,
  • 2 carrots,
  • 1 medium onion,
  • 2 cloves garlic,
  • salt,
  • pepper,
  • vinegar,
  • 2 tbsp olive oil.

The Process

Clean and chop the carrots. heat 2 tbsp olive oil in a pot, add the carrot and steer for a couple of minutes. This will give a nice orange color to the soup.

Add the other ingredients.

Add tarragon, fresh or in vinegar, water to cover and cook till everything is tender. Make sure you don't overcook it as it's no need for that. Add vinegar before serving. Serve with vegan sour cream if you like.

Suggestion

This recipe is a very simple one and basically you can replace the cauliflower with any other vegetable, like kohlrabi or potato, or both. You can add different spices and herbs as well, to make it more interesting.

If you don't have or don't like tarragon, you can use dill, bay leaf, lentil, parsley, whatever you like.

Facts

I'm always using a few tbsp olive oil for most of the soups because there are certain vitamins that are fat soluble, such as A, D, E, and K. Carrots contain vitamin A (from beta carotene) and need fat. Using olive oil is the best solution for me as it's healthy.
