Ulog #8 Avocado Ice Cream

AVOCADO is often said to be the most nutritious fruit in the world. The fruit provides more than 25 essential nutrients such as protein, iron, copper, phosphorus and magnesium, just to name a few.

The avocado is one of the favorite in our family. We used to eat avocado mixed with ice cubes, condensed or powdered milk and a little bit of sugar. It was a sweet and refreshing treat to have on a hot sunny day here in the Philippines. The peak of the fruiting season in our country is from May to September, although some trees in certain localities fruit from January to March.

And to refresh and beat the heat of summer, I will share to you an easy steps on how to make "Avocado Ice Cream" without using ice cream maker or churning

Ingredients:

1 kilo or 6 pcs. medium size ripe avocados

3 tbsp lemon juice

1 10 oz (300 ml) can sweetened condensed milk

3 (500 ml) can whipping cream

Procedures:

  1. Cut the avocados in halves, remove the pits and scoop out the flesh then grate.

  2. In a container, add lemon juice and condensed milk together with the grated avocado. Puree the mixture until smooth. Set aside.

  3. In a large bowl, beat the cream until stiff peaks form. Add the avocado mixture and fold it in until no white streaks can be seen.

  4. Spoon the mixture into a container, preferably a glass one with a lid. Cover the entire top surface with a plastic wrap and then cover with the lid. Freeze for at least 8 hours or overnight.

*Add nuts as toppings and serve.

Anyone can enjoy this home-made ice cream. It is absolutely creamy and delicious!
