Amigos de la comunidad de Cocina Creativa, estuve pensando en el tipo de receta, que se podría preparar, con tres berenjenas que tenía en la nevera. Revisé, asimismo, los ingredientes con que contaba y lo que se me ocurrió fue, prepararlas horneadas y rellenarlas con su misma pulpa, mezclada con carne texturizada de soja. Les cuento que aquello quedó, como para repetir. Lo único es que para hacerla, debes contar con suficiente tiempo.
INGREDIENTES
3 berenjenas
Un tomate tipo manzano grande
Una taza de queso ricotta
100 g de queso rallado
50 g de queso mozzarella
Sal y pimienta al gusto
Aceite de oliva
Una taza de texturizado de soja, con sabor a pollo
Tortillas de espinacas
INGREDIENTS
3 eggplants
One large apple tomato
One cup of ricotta cheese
100 g grated cheese
50 g mozzarella cheese
Salt and pepper to taste
Olive oil
One cup of texturized soy, chicken flavor
Spinach tortillas
PREPARACIÓN
Para el relleno:
Yo había preparado un guiso con la carne texturizada de soja, la puse en remojo por unos 10 minutos, luego de colarla y exprimirle el agua, la sofreí con un chorrito de aceite de oliva, agregándole pimentón, cebolla, ajo, y sal al gusto.
Para la guarnición o acompañamiento del plato:
Preparé unas tortillas de espinacas, con avena, huevos,
sal y pimienta.
For the stuffing:
I had prepared a stew with the textured soy meat, I soaked it for about 10 minutes, after straining it and squeezing the water out of it, I fried it with a drizzle of olive oil, adding paprika, onion, garlic, and salt to taste.
For the garnish or accompaniment of the dish:
I prepared some spinach tortillas, with oatmeal, eggs,
salt and pepper.
Primera cocción
Para las berenjenas al horno
En primer lugar, lavar cada berenjena con agua y un chorrito de vinagre. A continuación, corta cada una en dos partes a lo largo.
Con un cuchillo de punta alargada, haz unos cortes en forma de rombo, para que al hornearlas se cocinen bien.
Colocar las berenjenas ya cortadas en la bandeja donde se hornearán y pincelar cada una con aceite de oliva, sal y pimienta.
Hornear durante cuarenta minutos, o hasta que la carne se haya ablandado.
First baking
For the baked eggplants:
First, wash each eggplant with water and a splash of vinegar. Then, cut each one in two parts along its length.
With a knife with an elongated tip, make some diamond-shaped cuts, so that when baking it cooks well.
Place the eggplants already cut in the tray where they will be baked and brush each one with olive oil, salt and pepper.
Bake in the oven for forty minutes, or until the flesh has softened.
Sacar del horno, y aun caliente, extraer la pulpa, con una chuchara , teniendo cuidado de no romper la cáscara . Esa pulpa se va a picar menudita para mezclarla con el guiso de carne de pollo texturizada de soja, previamente preparada.
Rellenar cn esta mezcka cada una de las mitades. En mi caso de tres berenjenas, salieron seis piezas.
Luego, agregar a cada una un poco de aceite de oliva, para que mantengan la humedad.
Última cocción
Una vez rellenas las berenjenas con el guiso de pollo texturizado, se coloca encima de cada una el queso mozzarella, los tomates cortados en rodajas, el queso «ricotta» y el queso rallado. Se lleva nuevamente al horno, a 180º, durante media hora aproximadamente.
En la foto pueden ver lo bonito y delicioso que quedó mi receta, sobre todo, por la fusión de los tres tipos de queso, junto con la acidez y dulzor del tomate con el guiso. Todo resultó ser, una mezcla de sabores tal, que al probarlo, sentí una indescriptible satisfacción .
Last cooking
Once the eggplants are stuffed with the texturized chicken stew, place the mozzarella cheese, sliced tomatoes, ricotta cheese and grated cheese on top of each one. Bake again in the oven at 180º for about half an hour.
In the photo you can see how beautiful and delicious my recipe turned out, especially because of the fusion of the three types of cheese, together with the acidity and sweetness of the tomato with the stew. Everything turned out to be such a mixture of flavors that when I tasted it, I felt an indescribable satisfaction.
Una vez fuera del horno, se sirve con la tortilla de espinacas previamente preparada. Realmente, es lento el proceso, pero muy satisfactorio. Si la replican lo podrán comprobar.
Finalmente, lo que les puedo decir es que tomé lo que tenía en la nevera, y preparé esta receta. Solo que daba de cada queso una cantidad razonable y logré obtener un buen plato, sin tener que salir a comprar nada fuera del mercado que ya tenía en mi despensa y heladera.
La carne texturizada, la uso muy frecuentemente en casa. Generalmente preparo, una salsa tipo bologñesa, o solo carne para albóndigas o hamburguesas. es un producto demasiado sano y noble.viene de tres tipos, nartural , con sabor a pollo, y a carne.
