The simplicity, the taste and how quick it is to make this cake you will love it immediately, coconut is one of my favourite fruits and I have always made my children's snacks with coconut, today I cooked a coconut cake with oats, a great combination of two favourite ingredients in my kitchen.

With just a few ingredients you can cook the sponge cake in a frying pan without using the oven (if you want to double the recipe I advise you to use the oven), it also serves for breakfast or as an accompaniment to coffee or tea, the ingredients needed are as follows: • 1/4 cup shredded coconut • 1/4 cup of coconut milk, but if you don't have any, you can use any type of milk. • 1/4 cup leavened wheat flour • 2 tablespoons of oat flakes • 2 eggs • 2 tablespoons sugar, you can use any kind of sugar

We start with the hydration of the coconut because I bought it dry, I also take advantage and do the same with the oats; then in a bowl I add the coconut, the oats, the beaten eggs and the milk. I let it sit for about ten minutes and see that it is a thick mixture, it is normal and I still have to add the flour.

After hydrating the ingredients, add the sugar and flour, the mixture will become very thick and this is normal, there is nothing to worry about, the sponge cake will be soft and fluffy.

As the amount of mixture is not much I can cook this cake in the same way as a pancake, the only difference is that this mixture is very thick and we have to spread the mixture with the help of a spoon. It is cooked over low heat and covered for about three to five minutes, it is a very quick preparation so you have to be attentive in front of the cooker.

Turn it over and brown it on both sides, my frying pan is quite good because the mixture does not stick to the bottom, to prevent it from sticking you can add a little bit of oil before putting the mixture in the pan, this cake is very aromatic!... once ready, turn off the cooker.

Let it cool before serving, it won't take long, it cools quickly and as its flavour and aroma are very pleasant, this snack will be finished immediately.

You can decorate as you like, the icing sugar and grated coconut look very nice.

Bizcocho de coco 🥥 Deliciosa merienda

La sencillez, el sabor y lo rápido que es hacer éste bizcocho te encantará de inmediato, el coco es una de mis frutas favoritas y a mis hijos siempre les he hecho sus meriendas con coco, hoy cociné un bizcocho de coco con avena, una gran combinación de dos ingredientes favoritos en mi cocina.

Con pocos ingredientes puedes cocinar el bizcocho en un sartén sin necesidad de utilizar el horno (si deseas duplicar la receta te aconsejo utilizar el horno), también sirve para desayunar o de acompañante para el café o té, los ingredientes que se necesitan son los siguientes: • 1/4 de taza de coco rallado • 1/4 de taza de leche de coco, pero si no consigues puedes utilizar cualquier tipo de leche • 1/4 de taza de harina de trigo leudante • 2 cucharadas de avena en hojuelas • 2 huevos • 2 cucharada de azúcar, puedes utilizar cualquier tipo de azúcar

Comenzamos con la hidratación del coco porque lo compré seco, también aprovecho y hago lo mismo con la avena; entonces en un bol añado el coco, la avena, los huevos batidos y la leche. Dejo reposar por unos diez minutos y miren que es una mezcla espesa, es normal que sea así y aún falta colocar la harina.

Luego de haber hidratado los ingredientes le colocamos azúcar y la harina, la mezcla se pondrá muy espesa y eso es normal que suceda, no hay de que preocuparse igual quedará suave y esponjosa.

Como la cantidad de mezcla no es mucha puedo cocinar este bizcocho de la misma forma que un panqueque, la única diferencia es que ésta mezcla es muy espesa y tenemos que esparcir la mezcla con la ayuda de una cucharilla. Se cocina a fuego lento y lo tapamos por unos tres a cinco minutos, es una preparación muy rápida así que hay que estar atentos frente a la estufa.

Se le da la vuelta y se dora por ambos lados, mi sartén es bastante bondadoso pues no se pega la mezcla al fondo, para evitar que se pegue puedes añadir un poquito de aceite antes de colocar la mezcla en la sartén, es muy aromático este bizcocho!.. una vez listo apagamos la estufa

Dejamos enfriar para poder servir, no pasará mucho tiempo, se enfría rápidamente y como su sabor y aroma son muy agradable ésta merienda se acabará de inmediato

Puedes decorar como gustes, el azúcar glass y coco rallado le queda muy bien
