Greetings appreciated Hivers! We will celebrate Mother's Day soon, this 2nd Sunday of May here in Venezuela; And what better time to remind those magical and harmonious beings, procreators of life and splendor on earth, such as our mothers, than to participate in this great initiative. A beautiful way to honor and remember them has found the @laradio community through the initiative ¨the mother's food¨ A special touch for each person, each one remembers their mother according to their seasoning and that particular food that reminds you of her.
For this reason, I am very pleased to join this initiative, through the invitation of my friend @soychalbed, who tells us an emotional, delicious and pleasant story to honor this wonderful moment. I share her participation to honor and thank how significant it is to inherit talent for cooking from a mother.
Now yes! Without further ado I will tell you my experience, the favorite dishes made by the prodigious hands of my mother are all of course! Its food definitely feeds the soul, it is always warm, just right, with the right taste and loving on the palate….
I believe that each mother has the seasoning according to her personality hahaha… I associate this with it, because I have a friend from Las Mercedes del llano, Guárico state (Venezuelan plain) which I adore enormously; and so! Her mom's food is just like her: Hard! Llanera! Delivered! Super Hot! And with Super Sazón! Hahaha Divine, an exquisite food, but with that Recio touch!..I hope one day to hear the definition that my children have regarding my food.
But my mom definitely has a dish that tastes like glory with angels ringing bells. A Divine dish that feeds, leaves your Heart satisfied and happy; it's about minestrone. And as always, I have a particular story about minestrone that everyone at home remembers.
It turns out that when I was little I ate very badly, but it was mom's minestrone; I ate without opposition. I was about 4 years old and my mother was doing a pastry course, so we stayed at home with my older sister while mother came and went from her course. It turns out that mommy returned because the teacher did not arrive and my sister gave her to go out supposedly to buy bread to accompany the minestrone.
My mother arrived but my sister did not appear, it turns out that she had gone to find a boyfriend she had hidden. The dishes were served on the table, hot, with cheese parmesano on top, that delicious smell! and my sister took about 40 minutes to arrive, I only saw the dishes and my mother was enraged because my sister did not arrive. At last I arrive! But now came the big scolding. Then my father came to the same...To sum up, while she was being scolded, I was eating spoonfuls of each dish because the dishes served were too tempting.
At the end of the aforementioned scolding from the groom, they scold her again because the dishes had little food; She knew it was me, but she took the blame and we finally managed to sit down to eat. Thank God there was enough minestrone in the pot to repeat, and my sister managed to buy the bread to go with it…Now as moms I told myself my guilt in the matter! I had to get rid of that pain.
Minestrone is a dish of Italian origin characterized by being composed of a variety of vegetables. Among its ingredients you will find: carrot, onion and beans (white beans, beans, pearl beans, boston beans, white peas, blanquillo, pía, paimpol or broad beans, it is a variety of beans native to America). Minestrone is a balanced and nutritious dish, you can also vary it if you are a vegetarian.
First, we soak the white beans (or the selected grain) for eight hours.After this time we cook it and cook it for an hour. This could also be done in the pressure cooker, thus greatly reducing preparation time.
We cut the rest of the vegetables into small cubes. When the white beans are cooked, drain them, reserving the liquid.
In the pot we heat the olive oil and sauté the chopped onion for about three minutes. Add the potatoes, carrots, zucchini and celery. We stir and cook for another three minutes.
Add the garlic, the chicken broth, the white beans, the tomato and the reserved water to cook the white beans.Cook for an hour over medium heat.
Once the time has passed we add the pasta, we leave another ten minutes over medium heat.Season with salt and pepper. At the moment of serving add the basil leaves and the grated Parmesan cheese.
Aquel día de mi infancia que esperábamos ansiosos a mi hermana para que llegara; era un día fresco y lluvioso; por ello mi madre había preparado con anterioridad el minestrone.🍲 Cada vez que siento alguna nostalgia, sobre todo porque todos mis hermanos están fuera del país, y se avecina un día lluvioso; recuerdo ese olor a queso parmesano sobre la mesa y ese rico minestrone de mi madre que sabía me alimentaría por completo hasta poner mi cuerpo calientito para descansar.
That day of my childhood when we were anxiously waiting for my sister to arrive; it was a cool and rainy day; That is why my mother had previously prepared the minestrone.🍲 Every time I feel nostalgic, especially since all my brothers are out of the country, and a rainy day is coming; I remember that smell of Parmesan cheese on the table and that rich minestrone of my mother that I knew would feed me completely until I put my body warm to rest.
I also want to tell you that among my mother's most divine desserts is the orange delicacy and the cinnamon rolls. The roles are my delirium; that sweet, crunchy and fluffy combination has such an exquisite flavor that they cause you to eat a lot without stopping
