Bok Choy, Baby Back and Egg Brekkie

Another morning quickie comprised of leftovers. In this case, it was baby back ribs from last night's movie watch party celebrating the 50th anniversary of Blazing Saddles that I posted about here:

I started with one of my favorite, very flexible vegetables to incorporate into foods, Bok Choy. It has a wonderful combination of texture, moisture and flavor that enhances everything from soup to stir fry.

Next came the meat from one "bone". The light barbecue sauce I used had a mild vinegary tang that would go well with the other ingredient flavors.

I gave these a quick flash in some avocado oil. It's was just enough to warm the meat pieces while giving the bok choy pieces the right level of crunch.

Then came one egg, lightly scrambled so that it could interweave with the other ingredients. A splash of black pepper, salt and garlic powder helped bring it all together.
You have to be careful with garlic in any form, as it can burn and become bitter very easily. Keep its heat exposure to a minimum.

And there we have it. A quick, healthy wake up meal to start my day.
