Last Thursday was my birthday, and in this house we don't let a birthday pass without a good cake, and although my mood was not the best, because the truth is that exhaustion does its thing sometimes, I told myself that I had to prepare my cake, and I decided to make one that I had wanted to try for months, I had already tried it before from the hands of another person, and the truth is that I didn't like it at all, However, I knew that preparing it the way I had already seen it in some videos, it could not go wrong, and it is that since last year has become fashionable cake, angel food cake, which is nothing more than a combination of tres leches cake with quesillo or flan, and when we think about it, it is difficult to say that something goes wrong with this combination, because the truth is, it is perfect.

I will not say that it is a difficult cake, because it is quite simple, however, it requires time to make it, and personally, I would prefer to make it again in a smaller mold, as it was my birthday and probably some family members would come as usual, I wanted to make a mega cake, so I used a 28 centimeter mold to make both the cake and the quesillo. I preferred to use a sponge cake with fat, since I think that the basic three-ingredient sponge cake is very soft and could fall apart with the weight of the quesillo, but a pastry chef friend told me that this does not happen, so I will prepare it this way for the next time.

For the quesillo, I used my recipe, only that I recalculated the quantities, instead of using 10 eggs, I used only 7, so that it would not be so thick, although here among us, with the complete recipe, this cake would have been even more delicious. A basic tres leches sauce, and the touch of salted caramel, which gives it a delicious contrast, join me and I'll show you how to assemble this delicious cake.

1	28 cm diameter cake
750 ml	Whisping cream
500 ml	Milk
395 gr	Condensed milk

As I mentioned before, I used the same mold for both the quesillo and the cake, so I made the quesillo the day before, so that, in this way, it would have a better texture when assembling the cake, it is important that the quesillo is firm, otherwise the disaster will be monumental. I cut the cake in half, for a moment I thought about cutting it into 3 parts and filling one with whipped cream, but it's already sweet enough, I used a dome to assemble the cake, because I wanted it very moist, and I didn't want accidents. We place the first part of the cake and moisten it well with half of the tres leches sauce, which we prepare by blending the whole milk, condensed milk and about 250 ml of whipping cream in the blender. Add a touch of cinnamon to this sauce, now that I would not add to the decoration.

The moment of nerves, place the quesillo on top of the first part of the cake, then place the other part of the cake on top, and add the rest of the tres leches sauce, additionally, I added the liquid caramel that I had left over from the quesillo, this gives it a really delicious flavor contrast. Place in the refrigerator for a couple of hours and decorate.

I used whipped cream for the decoration, the truth is that a good Italian meringue goes very well, but the practicality of whipping cream won out hahaha, for every 100 ml of whipping cream, I added 1 tablespoon of powdered milk and 1 tablespoon of powdered sugar, to give it a touch of stability and sweetness, a touch of vanilla and to beat until firm peaks form, the perfect flavor contrast for this chantilly, was given by the salted caramel, and a few drops of chocolate with hazelnuts, because there is never too much chocolate hahaha.

The disadvantage of placing the cakes in these domes, is that when serving the portions, they do not look as neat, as you can see in a cake served on a tray, however, the fact of being able to add more liquid to soak the cake, makes it worth it, being a cake with fat, and being refrigerated, this takes a somewhat more compact texture, I did not take this into account when preparing the cake, so I have to try this recipe with a basic cake, but I must say that I fell in love with this cake, the combination of flavors is brutal, I thought it would be a cloying cake, and the truth is that the balance of sweets is very good, this is disputing the first place in my list of favorites with the black forest cake and the strawberry imperial hahahaha.

El jueves pasado fue mi cumpleaños, y en esta casa no se deja pasar un cumpleaños sin un buen pastel, y aunque mi ánimo no era el mejor, pues la verdad el agotamiento hace de las suyas en ocasiones, me dije que debía preparar mi torta, y decidí hacer una que desde hace meses quería probar, ya la había probado anteriormente de las manos de otra persona, y la verdad es que no me gusto en lo absoluto, sin embargo, sabía que preparándola de la manera que ya la había visto en algunos videos, no podía salir mal, y es que, desde el año pasado se ha puesto de moda la torta Beso de Ángel, que no es más que una combinación de torta tres leches con quesillo o flan, y cuando lo pensamos bien, es difícil decir que algo sale mal con esta combinación, pues la verdad, es perfecta.

No diré que es una torta difícil, pues, es bastante simple, sin embargo, requiere de hacerla con tiempo, y en lo personal, preferiría hacerla de nuevo en un molde más pequeño, como era mi cumpleaños y probablemente vendrían algunos familiares como es costumbre, quise hacer un mega pastel, por lo que utilice un molde de 28 centímetros para elaborar tanto el bizcocho como el quesillo. Preferí utilizar un bizcocho con materia grasa, ya que, me parece que el bizcocho básico de tres ingredientes, es muy suave y podría venirse abajo con el peso del quesillo, pero me comenta una amiga pastelera, que esto no sucede, entonces, para una próxima oportunidad lo preparare de esta forma.

Para el quesillo, utilice mi receta, solo que recalcule las cantidades, en lugar de utilizar 10 huevos, utilice solo 7, para que no quedara tan grueso, aunque aquí entre nos, con la receta completa, habría quedado aún mucho más deliciosa esta torta. Una salsa tres leches básica, y el toque de caramelo salado, que le da un contraste delicioso, acompáñame y te muestro el armado de este rico pastel.

750 ml	Crema para batir
500 ml	Leche

Como lo mencione antes, utilice el mismo molde, tanto para quesillo como para bizcocho, por lo que, el quesillo lo hice el día antes, para que, de esta manera, tuviera una mejor textura al momento de armar la torta, es importante que el quesillo este firme, de lo contrario, el desastre será monumental. Corte el bizcocho a la mitad, por un momento pensé en cortarlo en 3 partes y rellenar uno con crema batida, pero ya es suficiente dulce, utilice un domo para el armado de la torta, pues la quería bien húmeda, y no quería accidentes. Colocamos la primera parte del bizcocho y humedecemos bien con la mitad de la salsa tres leches, que preparamos batiendo en la licuadora la leche completa, leche condensada y unos 250 ml de crema para batir, le agregue a esta salsa un toque de canela, ya que no le colocaría a la decoración.

El momento de nervios, colocar el quesillo encima de la primera parte del bizcocho, para luego colocar la otra parte del bizcocho arriba, y agregar el resto de la salsa tres leches, adicionalmente, le agregue el caramelo líquido que me sobro del quesillo, esto le da un contraste de sabor realmente delicioso. Llevamos al refrigerador un par de horas y decoramos.

Utilice crema chantillí para la decoración, la verdad es que un buen merengue italiano le va muy bien, pero la practicidad de la crema para batir, le gano jajaja, por cada 100 ml de crema para batir, le agregue 1 cucharada de leche en polvo y 1 cucharada de azúcar glas, para darle un toque de estabilidad y dulzor, un toque de vainilla y a batir hasta formar picos firmes, el contraste de sabor perfecto para esta chantillí, se lo dio el caramelo salado, y unas gotas de chocolate con avellanas, porque nunca sobra el chocolate jajaja.

La desventaja de colocar las tortas en estos domos, es que al momento de servir las porciones, no se ven tan prolijas, como se pueden ver en un pastel servido en bandeja, sin embargo, el hecho de poder agregarle más líquido, para embeber el bizcocho, hace que valga la pena, al ser un bizcocho con materia grasa, y estar refrigerado, este toma una textura un tanto más compacta, esto no lo tome en cuenta al momento de preparar el bizcocho, por ello tengo que probar esta receta con un bizcocho básico, pero debo decir, que quede enamorada de esta torta, la combinación de sabores es brutal, pensé que sería una torta empalagosa, y la verdad es que el balance de dulces está muy bien, esta se encuentra disputando el primer lugar de mi lista de favoritos con la torta selva negra y la imperial de fresas jajajaja.
