My experience in the Dairy Products Engineering subject: cheese making process. / Mi experiencia en el curso de Ingeniería de productos lácteos: proceso de elaboración de queso. 😀❤️

While studying to receive my Food Engineering degree, I had the opportunity to attend a lot of extraordinary events and subjects related to the food industry. Of course I loved this (and also now), so I went everywhere: meetings, fairs, trainings. One of them was a short week-long trip to the city of Luján, 100 km from my house, to take the "Dairy Products Engineering" subject, where I had one from my first contacts with food machinery 😃.

Mientras estudiaba para recibir mi título de Ingeniera en Alimentos tuve la posibilidad de asistir a un montón de eventos y materias extraordinarias relacionadas a la industria de los alimentos. Por supuesto esto me encantaba (y también ahora), por lo que iba a todos lados: reuniones, ferias, capacitaciones. Uno de ellos fue un pequeño viaje de una semana hasta la ciudad de Luján, a 100 km de mi casa, para realizar el curso de "Ingeniería de productos lácteos", en donde tuve uno de mis primeros contactos con maquinaría alimenticia 😃.

The University of Luján has a pilot plant for dairy products: this is a factory with small-scale production of various foods. There, we were able to observe the making of such delicious cheese, which is the process that I want to share with you today ❤️.

La Universidad de Luján cuenta con una planta piloto de productos lácteos: esto es una fábrica con producción a pequeña escala de varios alimentos. Allí, pudimos observar la elaboración del tan delicioso queso, que es el proceso que quiero compartir con ustedes hoy ❤️.

Cheese is a dairy food produced from milk and rennet, a concentrate of specific bacteria that can be of animal or vegetable origin. What these bacteria do is acidify the milk and destabilize its structure, separating the solid phase from the liquid. The liquid part is known as "whey" and the solids are what will give rise to the cheese. For the elaboration of this product, a large tub is needed where the milk is placed together with the rennet to produce the cheese clot.

El queso es un alimento lácteo producido a partir de leche y cuajo, un concentrado de bacterias específicas que puede ser de origen animal o vegetal. Estas bacterias lo que hacen es acidificar la leche y desestabilizar su estructura, separando la fase sólida de la líquida. La parte líquida es lo conocido como "suero de leche" y los sólidos son los que darán origen al queso. Para la elaboración de este producto se necesita una gran tina en donde se coloca la leche junto al cuajo para producir el coágulo de queso.

The rennet they added is in the form of powder: they are freeze-dried bacteria (it is a process similar to dehydration but that keeps the bacteria in a dormant state). As the clot forms, you can see that the milk hardens, somewhat like the structure of a yogurt. This was amazing because it took just a few minutes to pass and that was a lot of milk. Once the clot forms, it is broken with a tool called a lyre. This favors the separation of the whey from the future cheese. They let us participate in this part of the process and there we were all happy breaking the whole giant clot 😂.

El cuajo que agregaron es en forma de polvo: son las bacterias liofilizadas (es un proceso parecido a la deshidratación pero que conserva las bacterias en estado latente). A medida que se va formando el coágulo, se puede ver que la leche se va endureciendo, algo así como la estructura de un yogur. Esto fue increíble porque tardó apenas unos minutos en pasar y eso que era una gran cantidad de leche. Una vez que el coágulo se forma, este se rompe con una herramienta llamada lira. Esto favorece que el suero se separe del futuro queso. Nos dejaron participar en esta parte del proceso y ahí estábamos todos felices rompiendo todo el coágulo gigante 😂.

Once this is done, the clot is emptied along with the serum into another vat where there is a separator. There, only the solid part is recovered and it is compressed into small containers that will later give rise to the cheeses.

A curious fact is that this process has a very low yield, close to 10%; that is to say that every 1000 kg of milk, only 100 kg of cheese are obtained since in the process a lot of water mass is lost in the form of whey. Take this into account every time you buy cheese and realize that it is very expensive 😂.

Una vez hecho esto, se vacía el coágulo junto con el suero a otra tina en donde hay un separador. Allí se recupera solo la parte sólida y se la comprime en pequeños recipientes que luego darán lugar a los quesos. Un dato curioso es que este proceso tiene un rendimiento muy bajo, cercano al 10%; es decir que cada 1000 kg de leche, se obtienen solo 100 kg de queso ya que en el proceso se pierde mucha masa de agua en forma de suero. Tenganlo en cuenta cada vez que compren queso y se den cuenta de que es carísimo 😂.

Once the cheeses are well compressed, the next step is to submerge each cheese last in a tub of salted water. This is for flavor and also has a preservative effect. After a few hours, the cheeses are removed and allowed to "ripen", to give rise to the formation of aromas and new flavors.

What does each type of cheese depend on (hard, semi-soft, soft, with holes, without holes, etc?) On the one hand, on the maturation time: hard cheeses are parked for months where they dehydrate a lot and soft cheeses are produced in less time, so they still retain a lot of liquid Whether it has holes or not depends on the type of rennet that is added: to achieve a cheese with holes, it is necessary to add bacteria that produce a lot of gas 😀.

Una vez que los quesos esten bien comprimidos, el paso siguiente es sumergir cada horma de queso en una tina con agua con sal. Esto es para darle sabor y también tiene un efecto de conservación. Luego de algunas horas, los quesos se retiran y se dejan "madurar", para dar lugar a la formación de aromas y nuevos sabores. ¿De qué depende cada tipo de queso (duro, semiblando, blando, con agujeros, sin agujeros, etc? Por un lado, del tiempo de maduración: los quesos duros son estacionados durante meses donde se deshidratan bastante y los quesos blandos se producen en menos tiempo, por lo que aún conservan gran cantidad de líquido. Que tenga agujeros o no depende del tipo de cuajo que se añada: para lograr un queso con agujeros, es necesario añadir bacterias que produzcan mucho gas 😃.

Of course that day we ate a lot of cheese: it was delicious. At the University they have a small store where they sell all these products to finance scholarships for students ❤️.

After a long day of learning, we returned to the hostel where my classmates and I were staying. As I mentioned in my previous post, the city of Luján is characterized by its beautiful Basilica, which we could see every day we were there 😀.

Por supuesto ese día comimos mucho queso: era delicioso. En la Universidad tienen una pequeña tienda donde comercializan todos esos productos para financiar becas para los estudiantes ❤️. Luego de un largo día de mucho aprendizaje, regresamos al hostel donde estábamos alojados mis compañeros y yo. Como mencioné en mi post anterior, la ciudad de Luján se caracteriza por su hermosa Basílica, la cual pudimos ver todos los días que estuvimos allí 😀.

This course was one of the most beautiful things I did in my student days. I remember that I doubted whether to go or not because I did not know the people who were going to go very well and at that moment I was somewhat shy, but luckily I was encouraged and I had a great time. All my colleagues were cool as we all share a taste for the food industry. Good thing I didn't miss that opportunity ❤️!

Este curso fue una de las cosas más lindas que hice en mis días de estudiante. Me acuerdo de que dudaba si ir o no porque no conocía muy bien a las personas que iban a ir y en ese momento era algo tímida, pero por suerte me animé y la pasé muy bien. Todos mis compañeros eran buena onda ya que todos compartimos el gusto por la industria de alimentos. ¡Que bueno que no me perdí esa oportunidad ❤️!
