Step 5: Filtration

Wines have been blended and stabilized. Almost ready to be bottled, but first filtration. Filtration can be done in many ways. Some wines are left unfilltered and just settled and racked. At the winery we use cross flow.

This involves high pressure pumps to pump the wine through the membrane filters. The wine is pushed through 1000s of hollowed spaghettis like tubes removing up 0.45 UM (yeast size) from the wine.

Flow rate varies depending how clean the wine is and how 'dirty' or gummed up the filters get. The machine itself also does run a back flush with already cleaned wine.
