In my town in one of the oldest bakeries that there are, they sell very small but with an incredible flavor, and I always went to buy a couple of them with a good orange juice before going to work, since I stopped working for others, I stopped going to the bakery, and with the issue of the pandemic they are not currently preparing them, so if I wanted to have breakfast those delicious little cubes, I had no choice but to try to prepare them. Let's just say that it is not an easy preparation, but without a doubt, it is a preparation worth the effort. My biggest fear was that Mi Mathias would accept it for breakfast, so for him I prepared some with smoked ham and bacon, which to tell the truth were just as good as the ones with ricotta and spinach.

For the pre-ferment

35 gr dry yeast.
2 Tbsp sugar.
2 Tbsp wheat flour.
200 ml of warm milk.

For the dough

700 gr baker's flour.
100 ml of milk.
180 g sugar.
2 eggs.
2 Tbsp oil.
1 tsp vanilla (optional).

For the Filling.

Ricotta Cheese with Spinach
Smoked ham and chopped bacon. (optional).

Preparation

Preparation time: 1.5 Hours
Cooking time: 40 Minutes.

To begin we prepare the pre-ferment, and this time I wanted to try something different, add in a cup, yeast, sugar and wheat flour, stir and add the milk while beating to integrate well, cover and take to a turned off oven for 15 minutes, or until the sponge is formed.

Once the sponge is formed, we pour the wheat flour into a large bowl, place a teaspoon of salt around one edge, and in the center we make a hole where we add the sugar followed by the pre-ferment sponge.

We continue adding the oil, vanilla and the two eggs.

With the help of an electric mixer, we begin to integrate, if you do not have it nothing happens, you can do it manually, just that it will take you more time to knead until you get a smooth dough that does not stick to your hands.

Once our dough is ready, we cover it with a little bit of oil and take it to the oven turned off for about an hour or until it doubles its size. Once it has doubled in size we remove the air with a few punches hahaha, and with the help of a rolling pin we extend the dough until it is about 5 millimeters thick.

We cut strips about 10 centimeters wide and make triangles, with a spoon we place a small portion of ricotta with spinach, or ham with bacon, in each triangle and roll them up, the amount of filling will depend on the size of the triangles.

Once the chunks are assembled, place them on a baking sheet previously buttered, let stand for about 30 minutes, and before taking them to the oven, brush them with a mixture of egg, milk and sugar, take them to a preheated oven at 180 ° C for 25 minutes.

You can tell my lack of experience with this preparation as some of the cachitos opened up, but the flavor was certainly not affected. I got about 30 pieces, although I tell you that I was the victim of a theft by Nena (my dog) I stole two pieces in a carelessness hahaha, is that even she knows that they are delicious.

Hace unos días les compartí una deliciosa receta de cómo hacer Queso Ricota con Espinacas, y la verdad es que con lo único que imaginaba comerlo era como relleno de unos deliciosos cachitos, pero pro falta de tiempo no los había podido preparar, hoy aprovechando que el insomnio hizo de las suyas conmigo, los prepare para el desayuno y la verdad es que la única queja que tengo, es que no prepare más masa para hacer más cachitos jajajaja.

En mi pueblo en una de las panaderías más viejas que hay venden unos cachitos muy pequeños, pero con un sabor increíble, y a la que siempre iba a comprar un par de ellos con un buen jugo de naranja antes de irme al trabajo, ya que deje de trabajar para otros, deje de ir para la panadería, y con el tema de la pandemia actualmente no los están preparando, así que, si quería desayunar esos deliciosos cachitos, no me quedaba de otra que intentar prepararlos. Digamos que no es una preparación sencilla, pero sin duda alguna, es una preparación que vale el esfuerzo. Mi mayor temor era que Mi Mathias lo aceptara para el desayuno, así que para el prepare unos de jamón ahumado y tocineta, que a decir verdad estaban igual de buenos que los que tenían ricota y espinacas.

Dos horas aproximadamente es el tiempo que necesitamos para preparar esta receta, así que, si tienes hambre no es algo que deberías intentar hacer, pero, si por el contrario quieres degustar algo delicioso, que bien puede servir para llevar al trabajo o al colegio, esta es una opción que debes probar, acompáñame y te muestro como lo prepare.

Para el Pre fermento

2 Cdas de azúcar.
2 Cdas de harina de trigo.
200 ml de leche tibia.

Para la masa

700 gr de harina panadera.
100 ml de leche.
180 gr de azúcar.
2 Huevos.
2 Cdas de aceite.
1 Cdta de vainilla (opcional).

Para el Relleno.

Queso Ricota con Espinacas
Jamón ahumado y tocineta picadita. (opcional).

Preparación

Tiempo de preparación: 1.5 Horas
Tiempo de cocción: 40 Minutos.

Para comenzar preparamos el pre fermento, y esta vez quise probar algo diferente, agregamos en una taza, la levadura, el azúcar y la harina de trigo, revolvemos y agregamos la leche mientras batimos para integrar bien, tapamos y llevamos a un horno apagado por 15 minutos, o hasta que se forme la esponja.

Una vez formada la esponja, volcamos la harina de trigo en un tazón grande, colocamos una cucharadita de sal por un borde, y en el centro hacemos un hoyo en donde agregamos el azúcar seguido de la esponja del pre fermento.

Continuamos agregando el aceite, la vainilla y los dos huevos.

Con ayuda de una batidora eléctrica, comenzamos a integrar, si no la tienes no pasa nada, lo puedes hacer manualmente, solo que te llevara más tiempo amasar hasta obtener una masa suave que no se pegue de las manos.

Una vez lista nuestra masa, la cubrimos con un poquito de aceite y llevamos al horno apagado por una hora aproximadamente o hasta que doble su tamaño. Una vez que haya doblado su tamaño le sacamos el aire con unos puñetazos jajaja, y con ayuda de un rodillo extendemos la masa hasta que tenga unos 5 milímetros de espesor.

Cortamos tiras de unos 10 centímetros de ancho y hacemos triángulos, con una cuchara colocamos una pequeña porción de ricota con espinacas, o jamón con tocineta, en cada triangulo y los enrollamos, la cantidad de relleno dependerá del tamaño de los triángulos.

Una vez armados los cachitos, los colocamos en una bandeja para horno previamente enmantecada, dejamos reposar por unos 30 minutos, y antes de llevar al horno los pincelamos con una mezcla de huevo leche y azúcar, llevamos a un horno precalentado a 180 °C por 25 Minutos.

Se puede notar mi falta de experiencia con esta preparación pues algunos de los cachitos se abrieron, pero el sabor sin duda no se vio afectado. Salieron unos 30 cachitos, aunque les cuento que fui víctima de un robo por parte de Nena (mi perra) me robo dos cachitos en un descuido jajaja, es que hasta ella sabe que son deliciosos.

Son geniales para ofrecer como bocadillos si los hacen pequeños como los prepare yo, para una fiesta o para una visita, son una delicia que pocos se van a atrever a rechazar, y lo que temía, que era que Mathias no los quisiera comer, gracias a Dios no paso, y los disfruto igual que todos en casa.
