This morning my little son got a hold of my my glasses and put them on his face. He was so happy to be like daddy, he grinned and told us all about it.
We got a "hubbard squash" at the store the other day, in an attempt to eat more orange colored foods. We've never opened one before and we heard they were very tough. We cut it in half without issue and were pleased to see the beautiful seeds inside.
The seeds are amazing, they are very plump - much plumper than pumpkin or melon seeds.
We are planning on roasting most of the seeds for a good snack, but we're saving a few for planting in the spring. We're hoping to grow some more of these beautiful squashes.
We carved out the seeds and insides, then baked the flesh and ate it for diner. Everyone really enjoyed it!
