Beauty of Green color- Stuffed Dew Bean Capsicum

Hello my hive fam! I hope that all are healthy and happy..

As we know that Capsicum is used as side veggies but very few knows that Capsicum can be used as a main dish. So today I am sharing a mouth watering recipe of Stuffed Moth (dew bean)Capsicum. Stuffed vegetables like stuffed Brinjals, stuffed Tomato, stuffed Bittergourd, stuffed green chili and stuffed ladyfinger etc are very famous in India.

Today I am making stuffed Capsicum.It goes well with Paranthas/ rotis and Fulkas. It was liked by everyone on my house. Usually I make potato stuffing or gramflour stuffing but today I tried something New and healthier option. There are many variations of stuffed Capsicum. Today I have ised Moth. MOTH is very healthy it is used as sprouts too. It is protein rich food

So lets start to make Stuffed Moth Capsicum.


Serving 3

Ingredients

Capsicum-3-4(meduim sized)
Onions-1cup
Moth-1 cup(dew beans)
Oil-2tbspn
Redchili powder-½tspn
Salt-to the taste.
Grated carrots-½cup
Potato-½cup
Coriander leaves-
Lemon juice-½tbspn


METHOD

1.take moth and soak it for atleast 6 hours or overnight.

2.then boil it for 1 whistle in pressure cooker.

3.now drain the water and strain it.

4.take capsicum of medium size. So that it will be easy to fill and cook. We can bake them too.

5.slice off the tops of Capsicum. Remove the seeds.

6.like this.

7.now heat oil in a pan or kadhai . Add cumin seeds.

8.add onions.

9.saute it.

10.now add grated carrot.

11.and mix it.

12.further add red chili powder and salt.

13.now add boiled Moth

14.mix it properly.

15.now boil potatoes

16.chop the potatoes.

17.and add the potatoes to the moth.

18.mash it and mix

19.add coriander leaves and lemon juice. Off the flame and cool it.

20.now take capsicum.

21.fill the moth mixture which we have prepared.

22.stuff the mixture with spoon or fingers in the capsicum.

23.like this.

24.now in a pan saute the stuffed Capsicum or bake it. I have saute it for 10 mins by covering the lid. Stirring occasionally. Put the slices on the top if you want.

25.cook it nicely and off the flame.

Its ready and Serve it with Paranthas/rotis or Fulka with Raita.
