¡Hola hola mis queridos amigos de Hive! El día de hoy les traigo una receta que pensé en compartir con ustedes puesto que en mi casa se hizo una sopa de caraotas y al quedar un poco decidí hacer esta receta para ustedes y además así cocinarle a mi familia una cena diferente. Aunque déjenme confesarles que es la primera vez que hago por mi cuentas unas empanadas así que espero que les guste la receta. ¡Vamos a ello! > Hello hello my dear friends of Hive! **Ingredientes** **Relleno** - 200 gr de Caraotas - Cebolla - Ají - Cebollín - Ajo porro - Cilantro - Sal al gusto **Para la empanada** - Harina de Maíz Precocida - 1 o 2 Cucharaditas de sal - 3 Cucharadas de Azucar - Agua - Aceite para freir.

**Ingredientes** **Backfill** - 200 gr of Caraotas - Onion - Chili - Chives - Garlic - Cilantro - Salt to taste **For the empanada** - Precooked corn flour - 1 or 2 teaspoons of salt - 3 tablespoons of sugar - Water - Oil for frying.

Primero debemos dejar remojando las caraotas todo un día, 24 horas y mantener refrigerado. > First we must let the beans soak for a whole day, 24 hours, and keep refrigerated.

Todos los ingredientes que utilizaremos lo cortaremos en cuadritos, lo más pequeño posible. O por lo menos, así lo prefiero yo. > All the ingredients that we will use will be cut into small squares, as small as possible. Or at least, that's the way I prefer it.

Al momento de hacer las caraotas las dejaremos unas cuantas horas con abundante agua en el fuego hasta que ablanden lo más posible, sin sal porqué según mi padre se tienden a pegar y por ende se queman más rápido. El tiempo en la olla dependerá de la calidad de los granos. En caso de tener una olla de presión se pueden colocar por una hora y luego allí ir viendo. Ya cuando estén lo suficientemente blandas se le agrega todos los ingredientes, incluida la sal. > At the moment of making the beans we will leave them for a few hours with abundant water in the fire until they soften as much as possible, without salt because according to my father they tend to stick together and therefore burn faster. The time in the pot will depend on the quality of the beans. If you have a pressure cooker you can put them in for an hour and then watch them there. When they are soft enough, add all the ingredients, including salt.

En la foto podemos observar que quedo aún abundante agua, esta era la intención puesto que se haría una sopa pero como haremos empanadas las dejaremos secar lo más posible. En mi caso, yo aparté la cantidad necesaria de granos como para 3 persona. > In the photo we can see that there is still plenty of water, this was the intention since we would make a soup but as we will make empanadas we will let them dry as much as possible. In my case, I set aside the necessary amount of beans for 3 people.

Ahora, pasaremos a la preparación de la masa. Colocaremos la cantidad necesaria de masa de maíz precocida y le agregamos una o dos cucharaditas de sal. > Now, we will move on to the preparation of the dough. We will place the necessary amount of precooked corn dough and add one or two teaspoons of salt.

Agregamos 3 cucharadas de azúcar para darle un leve toque dulce, no demasiado solo lo suficiente para endulzar la masa. > Add 3 tablespoons of sugar to give it a slight sweet touch, not too much, just enough to sweeten the dough.

Procedemos a verter el agua en la masa. > We proceed to pour the water into the dough.

Y empezamos a amasar hasta que nuestra masa se compacte y esté homogénea, sin grumos ni nada. > And we start to knead until our dough is compact and homogeneous, without lumps or anything. 20211220_230817 (1).gif

Y aquí empezamos con lo divertido: las empanadas. Buscamos una bolsa y la humedecemos, también podemos echarle aceite, esto con el fin de que nuestra masa no se pegue. Luego colocamos la masa sobre la bolsa y aplanamos lo más posible sin que quede tan delgada que la masa se rompa ni tan gruesa que sea más masa que relleno. > And here we start with the fun part: the empanadas. We find a bag and moisten it, we can also add oil, this so that our dough does not stick. Then we place the dough on the bag and flatten it as much as possible without making it so thin that the dough breaks or so thick that it is more dough than filling.

Agregamos lo suficiente de relleno en el medio de la masa. > Add enough filling in the middle of the dough.

Ahora tomaremos la punta de la bolsa y la llevaremos a la otra esquina, esto hay que hacerlo con cuidado y con la velocidad adecuada para que lo que seria la parte de arriba de la masa no se caiga antes. Ya cuando cubrimos el relleno aplanamos un poco las esquinas. > Now we will take the tip of the bag and take it to the other corner, this must be done carefully and with the proper speed so that what would be the top of the dough does not fall before. When we cover the filling we flatten the corners a little.

Luego con un tazón redondo haremos la forma de las empanadas. > Then with a round bowl we will make the shape of the empanadas.

Freímos en abundante aceite > Fry in abundant oil
