¡Hola Chicos!

Como les he comentado en post anteriores, actualmente me encuentro haciendo un curso de panadería y mi intención al hacerlo es de aprender todo lo posible, pero también aprovechar todas estas vivencias para compartirlas con ustedes y que también pueda sacarle provecho a mis clases. Voy a estarles compartiendo todas las preparaciones que hagamos en clases y trataré de hacerlo lo más detallado posible para que conozcan los pormenores de cada una de ellas. En mi segunda clase aprendimos a hacer pan campesino y pan francés, este es un post que compartí anteriormente. Y también aprendimos a hacer estos deliciosos roles de canela. Yo no los había comido nunca y la verdad es que me encantaron y tengan por seguro que los haré este fin de semana para disfrutar mucho más de ellos con mi familia. ♥ Así que les comparto los ingredientes y el procedimiento para hacer estas delicias que se ganaron mi corazón. ♥

Para la masa: * 1kg de Harina de trigo todo uso * 350 gr de leche líquida * 2 huevos * 60 gr de margarina * 30 gr de levadura instantánea * 150 gr de azúcar * 5 gr de sal Para el relleno: * 150 gramos de azúcar morena * 2 cdas de canela molida * 20 gr de margarina Para la cobertura: * 250 gr de queso crema * 150 gr de margarina repostera * 150 gr de azúcar glass * 1 cdita de esencia de vainilla

For the dough: * 1kg all-purpose wheat flour * 350 gr of liquid milk * 2 eggs * 60 gr margarine * 30 grams of instant yeast * 150 grams of sugar * 5 grams of salt For the filling: * 150 grams of brown sugar * 2 tablespoons of ground cinnamon * 20 grams of margarine For the topping: * 250 grams of cream cheese * 150 grams of confectioner's margarine * 150 grams of powdered sugar * 1 teaspoon vanilla essence

La harina la debemos cernir para evitar cualquier grumo que pueda quedar en nuestra masa. También vamos a preparar la levadura, la cual debemos disolver en la leche. Recuerden que deben probar la levadura para comprobar que esta en óptimas condiciones antes de integrarla al resto de los ingredientes.

Luego pasamos al mesón y amasamos haciendo presión con la palma de las manos. Luego de que este todo integramos agregaremos la sal, que debe ser de granos muy finos. Esta masa tiene una consistencia más dura que la de cualquier pan, por lo que no te de miedo si se siente algo dura durante el amasado. Si los ingredientes se pesan de forma correcta, no le faltará nada a nuestra masa.

En este punto todos estábamos esperando nuestro turno para intervenir en la preparación de los roles, pues estos a diferencia de los panes, los haríamos nosotros los alumnos.

Mientras el tiempo transcurre vamos a preparar lo que sería el relleno. Mezclamos el azúcar junto a la canela y reservamos. Transcurrido el tiempo de reposo, vamos a aplanar la masa con nuestras manos para sacar todo el aire. No debemos amasarla más pues podemos lograr que la masa se estrese y luego deberíamos dejarla reposando por otros 15 minutos.

Vamos estirando con nuestras manos la masa para darle la forma adecuada. Luego con la margarina vamos a cubrir toda la superficie de la masa, dejando un espacio de unos 3 centímetros, que sería nuestro cierre y que bañaremos posteriormente con agua.

Al estar listos la profesora los volteo todos para que pudiéramos observar lo doraditos y crujientes que quedaban. ♥
