Coffee Contest: Filet Mignon with caramelized onions in coffee sauce

My entry for this contest is a mix of two of the loves that I enjoy. The first love is my passion for cooking, and the second is my husband who is a coffee lover. I wanted to create a special recipe for him and have a romantic dinner. So this dish and its combination of flavors are inspired by love, especially coffee.

In Venezuela, we have several ingredients that are emblematic of our gastronomy. Among them are raw cane sugar and coffee, so I set to work to create a delicious and different recipe.

In the kitchen, you have to dare to experiment to innovate, but if you use the knowledge of culinary chemistry, you will have a tool that will help you to know how to properly combine the flavor of the coffee. Preparing desserts using coffee is sometimes easier than with the main dishes. The theory says that coffee combines very well with beef, bacon, and carrots, so my dish will have a bit of these ingredient so that taking a bite with all of them together will be a mind-blowing experience. I hope to make it since I want to surprise my husband.

To make this delicious recipe, you need:

2 pounds of tenderloin
200 grams of sliced bacon
2 onions chopped in strips
2 tablespoons raw cane sugar
2 teaspoons of instant coffee
salt and pepper to taste.

Take the piece of tenderloin and wrap it in plastic wrap, making a tight roll. Place it in the freezer for approximately one hour.

Remove the piece from the freezer and cut it into 2-centimeter medallions. Remove the plastic wrap around each medallion and place a strip of bacon around them. With the help of a string, you can tie the bacon to the medallion so that it is fixed. Season to taste.

In a preheated frying pan, place the medallions one by one and brown on both sides. You should not cook them for more than 7 minutes since would be overcooked. They should be cooked to medium doneness. Once browned, remove the medallions from the pan and set them aside in a separate tray.

In the same pan where the medallions were cooked, deglaze by adding the chopped onion, so it will cook in all the juices that came out of the meat and bacon. When the onion is translucent, add the raw cane sugar and the instant coffee dissolved in a little hot water. Stir well and cook over low heat until the sauce begins to thicken.

You can serve this dish with mashed potatoes and carrots sautéed in olive oil and garlic. Place the medallions on the plate and bathe with the caramelized onions in coffee sauce.

It was a delicious dinner. The combination of flavors was fantastic. I achieved my goal of surprising my husband with a dinner with his favorite flavor...coffee.
