The Green Tomato Chef - Massaman Curry

It's that time of year when many allotment keepers in the northern hemisphere end up wondering what to do with a deluge of green tomatoes. For many newbies it seems like a curse when all the tender loving care they've put into their tomato plants yields no red and ripe fruit.

The Green Tomato Chef is here to tell you to turn that frown upside down šŸ™ƒ as there are plenty of fantastic uses for those green crisp un-ripened tomatoes. No food shall go to waste #nofoodwaste

In all seriousness, they can be a little tart to eat raw and quite acidic for those of with a delecate stomach. I've already shared my recipe for the most popular way to process green tomatoes Green Tomato & Red Onion Chutney, but if you add them to specific cooked dishes which are both sweet and salty, their crisp freshness can really lift the dish bringing a whole new dimension in the eating.

It is that tart fresh flavour that means green tomatoes work particularly well in Thai curries. They are delicious in red and green Thai curries but also in Massaman curry.

Green Tomato Massaman Curry & Sticky Coconut Rice

This is a hard recipe, if you make the curry sauce from scratch. I have to admit to cheating buying a pre-made sauce, but as this is all about avoiding food waste I don't feel too guilty about taking the easy option šŸ˜‚

If you have the time it is well worth making the curry from scratch, sauce and all. A great recipe to follow can be found at connoisseurusveg.com. If you choose to follow that recipe simply add the green tomatoes at step three along with the sweet potatoes.


Cheats Massaman Curry

INGREDIENTS
  • 150g Green Tomatoes (halved)
  • 1 Onions (Diced)
  • 1 Sweet Potato (Large)
  • 3 carrots
  • 1 Green Chilli
  • Frozen peas (1 cup)
  • 1 Jar Massaman Curry Sauce (350ml)
  • Black pepper
  • Sea salt
  • Half a lime

For the Coconut Rice

  • 125g Jasmine Rice
  • 1 can of coconut milk (250ml)
  • 1 tablebspoon sugar

INSTRUCTIONS

  • Start with the coconut rice

  • In a small saucepan add 1 tablespoon of sugar to the rice and then stir in the coconut milk, bringing to the boil under a moderate heat. Keep stirring, and when bubbling turn the heat right down and let simmer with the lid on until the rice has absorbed the coconut milk. The rule of thumb is that there should be a 2/1 ratio, coconut milk/rice.

  • While the rice is cooking prep your veg. Chop the hard veg (carrots & potato) and par boil for ten minutes.

  • Meanwhile, chop the rest of the veg - roughly dice onions and quarter chilli, removing the seeds unless you like it hot.

  • Half green tomatoes, or if they're large ones (mine were cherry tomatoes) cut into roughly 4 cm chunks.

  • In a large sauce pan heat the butter over a low flame, add the onions and sweat them down until translucent (about 4 minutes) before adding the chilli to fry for 1 minute. Then add the frozen peas which will cool the pan down and stop the mix burning, and finally the green tomatoes.

  • Then pour the sauce in to the pan and swirl about 1/4 cup of water around the jar to get all of the sauce and thin it out a little.
    N.B. if you want to make a green/red Thai curry version of this recipe, this is the point when you can replace the Massaman sauce with Thai curry paste, and top up with a can of coconut milk. All other steps remain the same.

  • Simmer the curry over a low heat for 15 minutes with a lid on the saucepan and then let it stand for 30 minutes - an hour. Meanwhile, put the coconut rice in a container then refrigerate for an hour as this allows it to bind and become sticky.

Squeeze some lime juice over and season to taste.
