This was with pork bones! Omg how the flavour of the soup infused into the pork that was already so tender! I wish I had more pork bones!

I have 2 classes to tutor today and I was extra sleepy this morning. I needed to cook something fast and ensure there are vegetables and enough protein as well for the children as they are in a growing phase. So....

One Pot Borscht Soup it is!

I was thinking my ABC soup maybe a bit too boring by now so I needed to give it a twist when I suddenly remembered the borscht soup I haven't cooked in a while. It is nothing elaborate like the Russian version which I know takes many hours to boil and flavour it. I chose to do the Hong Kong style with some tomato paste in it!

Ingredients:

🍅celery
🍅500g pork bones
🍅300g Toman fish slices
🍅tomato puree
🍅peeled tomatoes
🍅carrots
🍅potatoes
🍅sweetcorn
🍅onion
🍅chicken stock

Cut up all the vegetables into bite size.

Next blanch the pork bones in hot boiling water to remove the blood and scums.

In another pot, boil some water and add in a chicken stock cube.

After all are ready and the water is boiling, add all the ingredients in one by one. If you have bay leaves, it will be even better but I did not have it off hand.

Last but not least, add in the can of peeled tomatoes and also the tomato puree. Season up with some salt and pepper. Let it boil and reduce so the flavours get into the soup.

When I was eating it, I felt my appetite being enhanced and I could drink alot of this soup because it is tangy and delicious! I boiled some glass noodles to go with it and it was perfect!

At night, when the pork bones were running out, we added some seasoned Toman fish slices instead to replace the protein part of the soup. What a good addition!!!

Delicious hearty meals always comfort the soul after a day of hard work!!! It did that for me today. Those who loves tomatoes will love this easy soup! All you need to do is chop chop chop and throw them in!
