Every year when the fishing season in the Mekong River arrives, the villagers who live next to the Mekong River will be able to catch a lot of fish and make a variety of dishes. There are only 2-3 times a year when we can catch a lot of fish, so in order to keep the fish for a long time, my family usually takes the fish they catch to make grilled and dried fish to eat. This will help preserve the fish meat to maintain its deliciousness and keep it for several months. My family usually grill fish in the traditional way, which is to grill the fish with coconut residue and smoke it to make the fish yellow, appetizing and fragrant too.
