I have always loved baking cakes, now I do it more than that, for an economic purpose, which also leads me to experiment with flavors and contrasts, yesterday I was a little bored and wanted to try how it would be to mix the two cakes that I love the most to accompany coffee, which would be the chocolate chip cake and the candied fruit cake, and additionally I added an extra touch of orange flavor, I would say that it is a mixture of many flavors, and at first I thought it was not going to be as good as it should be, but I must say that I fell in love with this flavor or mixture of flavors, it is one of those flavors that my grandmother loved, and that brought me so many memories of her, even my mother agreed with me.

There is a very popular commercial brand in my country, that since I can remember has been my favorite, and finding the right flavor of that cake, has been a really hard task, but I am convinced that with this mix of flavors I get to be pretty close, not to say that it is, the exact flavor. Of course, now I will need the approval of the customers to see if this new flavor will be sold, but it is likely that they will accept it and want it as much as I do, however, for the moment I will enjoy it (for quality control purposes of course), with a delicious cup of coffee, tiny, as you can see. All the flavors included are present, the pieces of candied fruit (come on, they all taste the same) can be differentiated from the chocolate and make the perfect contrast with the touch of orange that gives the bark of the same, the vanilla that is present at the end, the truth is a complete delight.

Let's just say that this is a really easy recipe that we can prepare at home without the need for an electric mixer and so many procedures, but if one of my favorite pastry chefs @irenebarreto has taught me anything, it's that you have to make use of the little tricks to achieve an ideal texture in cakes. 500 gr	Wheat flour
400 gr	Sugar
250 gr	Butter
13 g	Powdered milk
	Skin of an orange
4	Eggs
1 tsp	Vanilla
1 Cup	Water
150 gr	Candied fruits
50 gr	Drips of dark chocolate
	Icing sugar to decorate

Preparation time	15 Minutes
Cooking Time	45 Minutes

We will begin by preparing the milk that we are going to add to our mixture, and that is one of the dominant flavors of our cake, for this we take to high heat a cup of water and add the orange peel, cook until boiling and to this water with the orange peel we add the powdered milk and blend for a couple of minutes, then strain and set aside until it cools.

Continue the preparation while the milk cools, separate the egg whites from the yolks and beat the egg whites with half the sugar until stiff peaks are obtained, very similar to a raw meringue.

Once the raw meringue is obtained, remove from the mixer bowl and set aside, continue adding the butter that we will beat with the remaining sugar until a cream is obtained, and at this point add the egg yolks one at a time until everything is well mixed.

We continue adding half of the milk to which we add the vanilla, and once integrated we add half of the wheat flour (the other half we mix with the fruits and the chocolate drops), beat until integrated and remove from the mixer. We continue the preparation beating by hand, add the fruits and chocolate drops that we have mixed with the remaining wheat flour, we do this by hand, to prevent everything from going to the bottom of the mold in the baking.

Once all the wheat flour is integrated, we are going to add the meringue that we have reserved, with the help of a paddle and with wrapping movements. This will ensure a soft and fluffy crumb. Fill our molds and bake in a preheated oven at 180 °C (350 °F) for approximately 45 minutes, or until a toothpick comes out clean. These quantities were given for 3 pudding molds of 22×11 cm.

I must say that this is a cake that transported me to my childhood, that carefree childhood that I lived at my beloved grandmother Pancha's house, I remember that she used to buy some delicious cakes to go with coffee, and this one in particular had a flavor that although it is not identical, it is very similar and immediately took me back to that time, what good memories.

Siempre he amado hornear tortas, ahora lo hago más que por eso, por un fin económico, lo que me lleva también a experimentar con sabores y contrastes, ayer estaba un poco aburrida y quise probar como seria mezclar los dos ponqués que más amo para acompañar el café, que vendrían siendo el ponqué de chispas de chocolate y el de frutas confitadas, y que adicionalmente le puse un toque extra de sabor de naranja, diría que es una mezcla de muchos sabores, y en un principio pensé que no iba a quedar tan bueno como debería, pero debo decir que me enamore de este sabor o mezcla de sabores, es de esos sabores que mi abuela amaba, y que me trajo tantos recuerdos de ella, incluso mi madre estuvo de acuerdo conmigo.

Hay una marca comercial muy popular en mi país, que desde que tengo uso de razón ha sido mi favorito, y lograr dar con el sabor justo de ese ponqué, ha sido una tarea ardua realmente, pero estoy convencida de que con esta mezcla de sabores llego a estar bastante cerca, para no decir que es, el sabor exacto. Claro está, ahora faltaría la aprobación de los clientes para ver si este nuevo sabor se va a la venta, pero es probable que lo acepten y quieran tanto como yo, sin embargo, por el momento me lo disfrute (con fines de control de calidad claro está), con una deliciosa tacita de café, pequeñita, como podrán notarlo. Todos los sabores incluidos se hacen presentes, los trozos de frutas confitadas (venga que todas saben igual) se pueden diferenciar del chocolate y hacen el contraste perfecto con el toque de naranja que le brinda la corteza de la misma, la vainilla que se hace presente al finalizar, la verdad una completa delicia.

Digamos que esta es una receta realmente fácil, que podemos preparar en casa sin necesidad de contar con una batidora eléctrica y de tanto procedimiento, pero si algo me ha enseñado una de mis chefs pasteleras favorita @irenebarreto, es que hay que hacer uso de los truquitos para lograr una textura ideal en los bizcochos y ponqués. 500 gr	Harina de trigo
400 gr	Azúcar
250 gr	Mantequilla
13 gr	Leche en polvo
	Piel de una naranja
4	Huevos
1 Cdta	Vainilla
1 Taza	Agua
150 gr	Frutas confitadas
50 gr	Gotas de chocolate amargo
	Azúcar glas para decorar

Tiempo de preparación	15 Minutos
Tiempo de Cocción	45 Minutos

Comenzaremos preparando la leche que vamos a agregar a nuestra mezcla, y que es uno de los sabores dominantes de nuestro ponqué, para ello llevamos a fuego alto una taza de agua y adicionamos la corteza de la naranja, cocinamos hasta hervir y a esta agua con la piel de naranja le agregamos la leche en polvo y licuamos por un par de minutos, luego colamos y reservamos hasta que enfríe.

Continuamos la preparación mientras se enfría la leche, separamos las claras de las yemas y llevamos a batir las claras con la mitad del azúcar hasta obtener un punto de nieve muy similar a un merengue crudo.

Una vez obtenido el merengue crudo, retiramos del tazón de la batidora y reservamos, continuamos agregando la mantequilla que batiremos con el restante del azúcar hasta obtener una crema, y en este punto adicionamos de una en una, las yemas hasta mezclar todo muy bien.

Continuamos agregando la mitad de le leche a la que le adicionamos la vainilla, y una vez integrada le colocamos la mitad de la harina de trigo (la otra mitad la mezclamos con las frutas y las gotas de chocolate), batimos hasta integrar y retiramos de la batidora. Continuamos la preparación batiendo a mano, agréganos las frutas y gotas de chocolate que tenemos mezclado con la harina de trigo restante, esto lo hacemos a mano, para evitar que todo se vaya al fondo del molde en el horneado.

Una vez integrada toda la harina de trigo, vamos a agregar el merengue que tenemos reservado, con ayuda de una paleta y con movimientos envolventes. Esto nos asegura una miga suave y esponjosa. Llenamos nuestros moldes y llevamos a un horno pre calentado a 180 °C por aproximadamente 45 minutos o hasta que al introducir un palillo este salga limpio. Estás cantidades dieron para 3 moldes de budín de 22*11 cm.

Debo decir que este es un ponqué que me transportó a mi época de mi niñez, esa niñez despreocupada que viví en casa de mi amaba abuela Pancha, recuerdo que ella compraba unos ponqués riquísimos para acompañar el café, y este en especial quedó con un sabor que si bien no es idéntico, se le parece muchísimo y de inmediato me traslado a esa época, que buenos recuerdos.
