Why show flowers in black and white? Because it's a completely different mood. I usually do both variants in PS, color, and black&white. Often, black&white is my favorite.
Rejecting color to especially emphasize textures, shapes, light to create a completely different atmosphere. Trying different channels, contrast, brightness, to get what I want and what I feel best with... may not be the same as how it makes you feel.
