#10 Challenge___Great AseanHive Cook-Off: Mixed Veggies 4-in-1 Recipes

Hello ASEAN Hivers! I will be presenting a menu that's healthy and easy to find almost if not all, in any Asian markets. Here are the main ingredients:

Baguio Beans
Pear Squash (chayote)
Turnips
Carrots
Bell peppers
Raisins
Fried peanuts
Onions
Garlic
Olive oil
Crepes

Slice the veggies in thin elongated shape including carrots, bell peppers and turnips. This will make it easier to wrap the veggies.

Crunch the peanuts. The turnips will be the last one to go to maintain its crispy effect.

With these preparation, I am able to make 4 kinds of recipe:

1. Veggie deluxe
2. Fresh Lumpia (Spring Rolls)
3. Taco
4. Fried Lumpia

Veggie deluxe
This will start with the sauteed veggies. You can serve it on the table any time of the day.

Fresh Lumpia

This is good for making Fresh Lumpia too. You only need to add a gravy for this after wrapping it as shown on the above photo.

Tacos
Since it's fresh, you can likewise make some tacos too. ! Actually, I prepared this when my two girls were at home with their family. Each have their options and they were excited while preparing their own choices! Take note: The turnips need not be cooked. Just mix it with the other stuffs to make it crunchy then sprinkle some crunched peanuts plus the gravy.

Fried Lumpia

It is lasting when you wrap it with a crepe and freeze it. With this, you can fry it anytime you want especially when you're in a hurry and no longer have time to cook your food. It's economical too!

See, no left overs are left behind! It's a good cook off for my girls to show to them the importance of good and healthy nutritious cooking the economical way and less fats! The good thing is that I've made 4 dishes in one recipe!
