Dare To Try My Potato With Chilli Sauce (Kentang Balado)?

Kentang balado is a kind of chili sauce with fried potatoes. It is very popular among Minang and Malay ethnic groups who live on Sumatra island.

The recipe can be different from that of Kentang balado from West Sumatra. I tried a recipe from my friend who is from Riau. I lived with him when I was in Yogykarta.

He did not like Javanese food because he was from Riau. His Malay ethnicity had a strong influence on him. He still spoke in the Malay Riau dialect and he only ate his food or Padang food. I lived with him in a house that we rented together. I often saw him cooking because he did not want to buy food from Javanese food stalls. One of the easiest recipes of his is "Kentang Balado."

Here is the recipe

Ingredients
2 medium potatoes
2 red onions or shallots.
7 big and red chillies
3 small chillies (rawit) ( My friend did not like small chillies or cabe rawit).
2 medium tomatoes.
½ teaspoons of salt
¼ teaspoon of sugar
1 cm of shrimp paste

  • Grind the chillies, onions, and tomatoes until smooth and mixed with salt and sugar.

  • Cut the potatoes into blocks of small pieces.

  • Fry the cut potatoes until brownish and take them out.

  • Prepare 3 spoons of cooking oil and heat
  • Stir fry the ground chillies and potatoes.

  • Wait until it smells a little bit fragrant.
  • Put the fried potatoes in the balado (fried chillies and tomato sauce).

  • Stir fry until they are mixed up with the sauce.
  • It is time to serve Kentang Balado.

Kentang balado is a kind of sauce or sambal, you can eat with white rice , eggs, chickens, and vegetables. If you eat kentang balado alone, you will taste very hot fried potatoes.
