Fried Bread Fruit Sausage and scrambled Duck Eggs

So our neighbor brought us fresh chicken and duck eggs this morning.

It was unexpected, yet much appreciated. I love fresh eggs, and I've never eaten duck eggs.

So I set off to make breakfast for me and my pops. I grabbed a half of bread fruit, and cut into squares. I also cut some onions, and some sausage.

I added some olive oil to the pan and started to cook to the ingredients. Bread fruit is similar to potatoes in many ways. If you want details on how I cooked the bread fruit. Check out my previous blog.

I was juggling quite a few things this morning, and wasn't able to to go into details with the photos. I have a pretty young rescue kitten staying with me, and he was presenting a bit of a challenge this morning.

That was where he wanted to be, and he was not moving. I will admit it took some skill being mindful of him while cooking.

As expected the duck eggs were somewhat big. I assumed there wouldn't be much difference, and prepared my scrambled eggs the I way I would with regular eggs.

While seasoning the bread fruit, adding the butter and letting them steam cook. I cut some cheddar, and whisked the eggs. All while balancing my little buddy on my foot.

I really like the flavor that maple syrup gives the home fried breaded fruit. It blends nicely with the sausage. While the bread fruit and sausages cooked, I made the scrambled eggs. Then I heated up some toast.

Luckily this is a simple breakfast. I served myself some passion fruit juice, and sat down to eat with my dad. In my my previous blog. I explained that I had no experience with this fruit the first time I made this dish, and before this dish my dad would have refused to eat bread fruit. It's a small delicious victory for me. Not to mention a first with the duck eggs.
