¡Hola Chicos!

Hoy me tomé el día libre, decidí no llevar a mi hijo al colegio y descansar un poco más de lo que estoy acostumbrada. Me sentía muy agotada, aún no me acostumbro a los horarios de clases y eso que mi hijo está en el colegio desde hace 7 años jajaja. Quise darme este día libre para organizarme en cuanto a los trabajos que tengo que hacer, las labores del hogar y unos proyectos que estoy comenzando. Necesitaba mi mente bien descansada para poder hacerlo. Pero antes de comenzar con eso necesitaba un buen desayuno cargado de muchas vitaminas que me llenara de energía para trabajar con todos los ánimos. Es por eso que decidí hacer unos deliciosos huevos revueltos con vegetales para mi hijo y para mí (ya que mi esposo seguía dormido aún). Por supuesto, no podía dejar de documentarlo todo para compartir la idea con ustedes.

Today I took the day off, I decided not to take my son to school and rest a little more than I'm used to. I felt very exhausted, I still haven't gotten used to the class schedules and my son has been at school for 7 years hahaha. I wanted to give myself this day off to organize myself in terms of the work I have to do, the housework and some projects that I am starting. I needed my mind well rested to be able to do it. But before starting with that I needed a good breakfast loaded with many vitamins that would fill me with energy to work with all my spirits. That's why I decided to make some delicious scrambled eggs with vegetables for my son and me (since my husband was still asleep). Of course, I couldn't stop documenting everything to share the idea with you.

Estos los llevé a una sartén a la que agregué previamente un poco de aceite. Sofreí por un par de minutos.

I took these to a frying pan to which I previously added a little oil. I fry for a couple of minutes.

Esta también puede ser reemplazada por cualquier tipo de embutido. Cociné la mortadela previamente en la plancha para que al agregarla a la preparación no quedara pegada al sartén. También en un envase aparte abrí 3 huevos.

This can also be replaced by any type of sausage. I previously cooked the mortadella on the griddle so that when it was added to the preparation it would not stick to the pan. Also in a separate container I opened 3 eggs.

También agregué un poco de sal.

Luego llegué a la plancha engrasada y cocine por unos 3 minutos de cada lado. El resultado fueron unos pancakes bien suaves y esponjosos.

Then I got to the greased griddle and cook for about 3 minutes on each side. The result was very soft and fluffy pancakes.

Los piqué a la mitad y serví junto a los huevos revueltos y un poco de queso rallado. El resultado fue delicioso. Mi hijo y yo disfrutamos de un rico desayuno juntos y yo me siento súper lista para planificar mis días y ser mucho más productiva. Espero les haya gustado la receta. Nos leemos en la próxima. ❤️😊

I chopped them in half and served alongside the scrambled eggs and some grated cheese. The result was delicious.
