Hoy con una receta fácil y sencilla de preparar se trata de unos higados de res en salsa de tomate, es importante disfrutar de comidas nutritivas y deliciosas, el hígado de res es ideal para aquellas personas que tienen baja hemoglobina, contiene vitaminas y hierro y es gran fuente de proteínas y favorece el sistema inmunológico. Aunque a los niños poco les gusta es importante incluirselos en su dieta.

500 grs de higado de res, 02 cebollas, 01 pimentón, 01 taza de puré de tomate, 01 taza de leche, 03 dientes de ajo, 01 cuchararda de vinagre, 01 cucharada de azúcar, sal y pimienta al gusto // 500 grams of beef liver, 02 onions, 01 paprika, 01 cup of tomato puree, 01 cup of milk, 03 cloves of garlic, 01 teaspoon of vinegar, 01 tablespoon of sugar, salt and pepper to taste.

Lo primero que hago es poner el higado en leche por 15 minutos, esto ayudará a que el sabor sea menos fuerte, luego lo enjuago lo cuelo y le agrego sal y el ajo machacado dejo reposar por 15 minutos.

Seguido en un sarten con aceite añado el pimentón y la cebolla cortados en juliana, lo dejo sofreir por unos minutos, los reservos.

En el mismo sarten agrego el higado de res, le coloco sal, pimienta y vinagre, lo sofrio por 10 minutos dándole vueltas por cada lado, luego los saco los cortos en tiras los vuelvo a añadir al sarten le añado los aliños sofritos y dejo cocinar por cinco minutos para que impregne los sabores.

Ahora le incorporo el puré de tomate, el cual hice sancochando los tomates, retirandole la piel y las semillas y lo licué, luego agrego azúcar y rectifico de sal dejo cocinar por 10 minutos más a fuego lento y listo.

Este plato lo acompañé con arroz, pero se puede servir con pasta, arepas, pan de molde y papas cocidas.
