Ladies of Hive Community Contest #81 - Tomato!

Hello everybody! I'm here again to join the contest #81 of the Ladies of Hive Community.
There are two topics and I have chosen the first one:

If you plan to grow a vegetable garden, what is your favorite vegetable to grow and what dishes do you use if for? Feel free to include a special recipe using that vegetable!

So my article should be titled: Tomato!
I love tomato a lot, I think I always loved it, I choose many times any dish with tomato, and sometimes I said "I belong to the tomato club" like I am one person who likes very much this vegetable that came from America five centuries ago. What a discovery for the gastronomy! Now tomato is always present in our kitchens, at least in mine for sure.

I think it is one of the most versatile vegetables because you can eat it in many different dishes, from simple and fresh salads to other more elaborate dishes, in stews and especially in Italian dishes, in which tomatoes turn into a rich and tasty sauce that accompanies pasta but also other many things.

I would like to be able to plant more, at the moment I already have a small tomato plant from which some small yellow flowers already bloomed from which the small red tomatoes should sprout and grow. Hope they will grow well soon!

But my grandmother did also plant some on her terrace and they did grow and turn into small tomatoes, first green and then they turned a beautiful red color and a wonderful flavor. Because what we grow seems that afterwards, in addition to giving us great satisfaction, it absolutely seems to us that they have a better flavor.

An finally I want to add also an easy and very simple recipe here tomato is essential. You can prepare it quite quickly that can be taken alone as a dish, or also with some other companion such as rice, quinoa, pasta or dipping with bread. That depends on your own choice.

At the moment you will only need:

  • A good amount of tomato to prepare a normal sauce, just crush and strain them or if you are lazy just put 1 large jar of crushed tomato. For two people you will need about 800 gramos of sauce.
  • 1 can of roasted red pepper, it usually comes in strips or pieces, you can also roast it and put it in oil.
  • 2 chicken breasts, it depends on the size and how hungry you are.
  • Much garlic! Several cloves of garlic also depends on your taste for this food.
  • And extra virgin olive oil and sea salt (I prefer this type of salt because it has more nutrients than the refined one).

*The amounts are indicative, I don't measure them much either, but more or less they are these but they can be adapted.

How to prepare it:

  • As simple as chopping the chicken, putting it in a pan or pot to fry with olive oil until it is completely browned. And reserve it.
  • On the other hand, in a pot, add more olive oil and add the garlic until they begin to brown.
  • Now all the tomato is added over low heat, let it cook and add a good pinch of salt to taste. When it starts to bubble, add all the red pepper and leave it for only a few minutes, until the liquid evaporates a little more, and finally at the last moment the chicken is added, it is given a few turns and that's it.
