ecoTrain Simple Vegan Cooking On A Budget Month : Malabar spinach Mixed Vegetable Curry (ପୋଇ ଘାଣ୍ଟ) - a healthy delight

You can use Malabar spinach from your organic garden, as the main ingredient to prepare a very healthy mixed vegetable curry.

In my last post, I shared how you can prepare Malabar spinach Fry - which is now kid's favorite. Today I am going to share a very simple way of making a mixed vegetable curry that is very delicious as well.

Malabar spinach grows fast, so you can cut some stems from your container garden and utilize them to prepare the dish. It even allows the new stems to come with better leaves, for next use. If you want to have the fry also, just take out the big leaves and keep aside for the fry and follow the process from my previous post.

You can gather the following vegetables to add : Brinjal (Eggplant),pumpkin, tomato, potato, colocasia root and rich gourd. Chop the Malabar spinach leafy part and stems separately and chop other vegetables as shown below. Keep the size of colocasia root smaller, so that it will easily boil.

Then have the following spices : Onion, Garlic, Ginger paste (by grinding them together or if you want, can use ready made available), some chopped Onion, Cummin powder ( better to prepare fresh), Cinnamon (fried and crushed) , Coriander powder, Chili Powder (quantity depends on your taste), turmeric powder and bay leaf. And of course salt 😀.

You can add Sundried Lentil (କଖାରୁ ବଡି - shown above) if you get it - it adds pretty good taste as well as flavour. Fry the Malabar spinach stems and each of the vegetables first for 1-2 minutes with cooking oil (we use mustard oil) of your choice and keep them aside. Then fry the chopped Onion till it becomes golden brown, add the Onion, Garlic, Ginger paste, turmeric powder and fry on slow heat for 3-4 minutes then add Cummin powder, Coriander powder, Chili Powder and bay leaf and fry for another 3-4 minutes( you will get the flavor once its ready).

Now add the chopped tomato and fry for a minute and then add other vegetables except Brinjal, Malabar spinach leaf and Lentil ( Will add them later as they cook fast). Add some water and salt and cook them for 7-8 minutes and then add the Brinjal,Malabar spinach leaf and Lentil and mix them and cook for another 3-4 minutes.

The purpose of cooking these vegetables in the above order is to have them all cooked properly. At the end add the Cinnamon powder and mix it properly to add the flavor.

Now you can serve it with Rice or Roti and other stuffs. We also prepared the Malabar spinach Fry, on kid's demand.

Hope you enjoy this vegan dish which is a healthy delight. We have now included Malabar spinach dishes at least twice a week to fulfill the vitamin needs of our kids. Especially now a days with online classes, its very much essential to have their vitamin A to protect the eyes. And since I am growing them myself organically at the roof top they are readily available.
