Hi everyone, this is my entry to ecoTrain Medicinal Cooking Competition Week 3. This week competition comes with the recipe for making Thai lettuce Springrolls and peanut satay sauce, a recipe made with veggie only and is totally raw food. What a great idea! I am not the person who often eats much veggie, so why not give it a try, it's time for healthy food 😊.
Let's start by chopping all the ingredients. I had tried to follow exactly the given recipe except for the tomatoes and using carrot instead as I love it's crunchiness.
Ok, and now it's rolling time! Let's see my first try :)
That's not too bad, right. But I noticed that the roll was quite loose and it's not stay like a roll when I placed it on the dish, then my helper came, I used rice paper to keep my rolls tight and stay in shape. The great thing is rice paper does not change the taste of the dish but make it look nicer and easier when you eat as well. I also added some roasted peanut in the rolls, I thought it will go well with the veggie.
And this is what I got after 20 minutes (5min for rolling and 15min for photo shoot 😂).
This is the version without lettuce.
Now, we need the peanut satay sauce. It was a bit messy when I tried to make the sauce following the given recipe, but finally it's all fine and this is what I got.

The rolls were crunchy and juicy. I love the satay sauce, it's sweet, sour, a bit salty and very creamy. I heard about satay sauce before but never know that it was this easy to make. Thank you @ecotrain again for sharing this recipe! I made them fast and ate them fast as well 😄.
