Greetings everyone,

It's always nice to engage yourself in every great activity like the @ecotrain competition. Aside from their exciting prizes, it's also about the great challenges that will try all the abilities of each active challenger.

I love fresh raw veggies especially the main ingredient for this competition which is lettuce, that's why when I know this I was constantly thinking to participate since it's my favourite. Today I'll be contributing my simple creation and honestly, it's my first time making this type of food and my first time having it with peanut satay sauce.

Growing up with my aunt and American uncle before I can always see them preparing fresh vegetable salads so no wonder that I am accustomed to eating raw vegetables. Today, living a simple life with my new surrounding and people around me it's funny to think what they think about having raw veggies they said that they don't like it because they have been thinking that it might give them stomach pain.

Anyway, If I have given a chance to have fresh raw vegetables often I would love it. It made me feel like it's my time cleansing my body from my bad eating habit.

I call my creation Modified Lettuce Spring rolls as I change some of the ingredients like for my peanut satay I also add on some ingredients for unique tastes.

The ingredients

Spring roll

  • lettuce
  • cucumber (stripped 6cm)
  • carrot (extra thin stripped)
  • green pepper (stripped)
  • tomato (cut)
  • cabbage (regular) (salad cut)
  • mango (stripped)
  • basil

Peanut satay

  • peanut butter
  • fresh peanut (toasted)
  • 3 tsp sugar
  • 5 small lemoncito (citrus)
  • 1-inch ginger
  • 3 tsp soy sauce

DIY wrap

  • all-purpose flour
  • cornstarch
  • salt
  • water

I prepared my spring rolls based on the availability of ingredients in my area. I also used DIY wrap to bring all my ingredients together since I couldn't get the appropriate size of lettuce for wrapping.

Steps for my spring rolls

First step is I made my DIY wrap which I made from all-purpose flour, cornstarch, salt and water.
Set aside after.

Second step is I make my peanut satay which I probably alter and made into a version which is inspired from the cooking show I saw before but the ingredients are based on affordability and availability I can provide but still have the same factors. Since I don't have a blender I use peanut butter spread mix with citrus, sugar, smash ginger and salt mix all together perfectly and garnish with toasted peanut and basil leaves. I didn't add chillies because I want the kids to try also.

After all the ingredients are ready to time for assembling.

  • I simply file the ingredients, add ethical quantity and wrap the lettuce first and followed by my DIY wrappers, (from the whole wrapper I divide them into two.

Finish product

Taste was crunchy, light and sweet because of the mango and after you take a dip you can taste both sweet, sour and salty at the same time. Indeed it was a great experience with my lettuce spring roll recipe.
