Beet Muffins

Good day friends!!!

Today I want to share with you a recipe for an easy and inexpensive vegan dessert "Beet Muffins".

This rich cupcakes is made on the basis of beet, a reddish vegetable, which contains water and carbohydrates, which makes it a vegetable rich in sugars, and fiber, in addition, it provides antioxidants, water-soluble vitamins of group B, (B1, B2, B3, B6 and B9) and vitamin C, precursors of vitamin A, such as carotenes and different minerals (iron, manganese, potassium and magnesium).

This vegetable has been attributed antitumor properties, which is excellent for the prevention of diseases such as cancer, hence, today I will give you this healthy option for a snack, take to work or walks ... it really is a simple and inexpensive dessert .

You will need the following ingredients:

• 1 large grated beets.
• 1/4 cup of flaxseed water, replacing the egg.
•The juice of half a lemon.
• 4 tablespoons of vegetable oil
• 1 cup of wheat flour.
• 3 spoonfuls of sugar.
• 1 pinch of salt.
• 1 teaspoon of cinnamon.

In the blender, pour the beets, flaxseed water, sugar, cinnamon, salt, lemon juice and oil, blend until everything is integrated.

Add the mixture in a bowl, and gradually incorporate the flour until it forms a homogeneous mixture.

Next, add to the previously greased cupcake molds and bake at 180 degrees for approximately 15 minutes or until the toothpick comes out clean.
