ecoTrain "Simple Vegan Cooking On A Budget Month!" Week 2 recipes: Mini Corn and Chives Pie

Hello friends!!

In support of the @ecotrain initiative in conjunction with @ocd, today I want to share with you a delicious recipe that I use to prepare regularly, because it is easy, simple and tasty. I tell you about some mini corn pie with chives. I love corn, in fact in my yard I have some plants that are easy to grow and we have to take advantage of their contributions since it is rich in vitamins and minerals howas iron, phosphorus, magnesium among others.

Ingredients:

Mass:

-200 grams of wheat flour.
-¼ cup of vegetable oil.
-½ teaspoon of salt.
-2 tablespoon of cold water.
-½ teaspoon of sugar.

Filling:

-Grains of two jojotos.
-1 cup of water.
-1 chives.
-3 peppers.
-1 tablespoon of cornstarch.
-A pinch of salt
-Pepper to taste.

In a bowl add the flour, together with the oil, salt and sugar, integrate with the fingertips, then add the cold water until smooth, if the dough is a little dry add a few drops of water, put in the fridge for 25 minutes.

We proceed to chop chives and chili peppers and blend together with the water, cornstarch, salt, pepper and half of the jojotos grains.

Then we take to the fire and stir with the spoon until it thickens, add the other half of the corn kernels, and rectify the flavors.

We continue oiling some muffin molds and making small balls and stretching them with the help of the hands and shaping the mold and making small holes with a fork.

We proceed to fill the mini pie and make a small lid with the dough, I mark with the help of a knife some small squares with the knife and a small flower of dough to decorate and they will be beautiful. Finally we take to the oven for 25 minutes at 180 C.
