En Venezuela las caraotas forman parte de su cultura, de su gastronomía típica y su elaboración varía de acuerdo a la cultura gusto de su gente, es decir, depende del estado región donde se preparé; las caraotas, frijoles negros o habichuelas negras como suelen decirle en otros países del mundo latino son una delicia y se pueden guisar o preparar solas o acompañadas con proteínas como los huesitos ahumados, cerdo, tocineta, jamón entre otros, las hay en Venezuela de tres tipos negras, rojas y blancas, en la parte occidental se comen salda y en el oriente dulces; así mismo hay quienes les gusta una vez que son preparadas bastante queso rallado para sentir el contraste dulce-salado; las misma pueden ser acompañadas por arroz o forman parte de un plato muy emblemático de la gastronomía venezolana como lo es el pabellón criollo u oriental, también es utilizado para el relleno de arepas y empanadas. En mi caso me gustas prepararlas dulces, sola o incorporándole huesitos-chuleta-tocineta ahumada, en este caso la elabore con unos huesitos humados y la verdad quedaron muy ricas, me encanta no dejarla secas sino que a medida de su cocción que muy jugositas. Para elaboras este rico platillo se necesita tener en casa los siguientes ingredientes:

• ½ kilo de caraotas o frijoles negros
• ½ kilo de huesito ahumados
• Dos cabezas de ajo
• Dos cebollas pequeñas
• Una rama Cebollín
• Una rama de cilantro o culantro
• Una rama de ajo chino
• Una rama de apio España
• Un pimentón rojos mediano
• 6 ajíes dulces
• Una papeleta de bicarbonato de sodio
• Pimienta al gusto
• Sal y azúcar
• Laurel en hoja
• Comino al gusto

In my case I like to prepare them sweet, alone or incorporating bones-chuleta-smoked bacon, in this case I elaborated it with some smoked bones and the truth was very rich, I love not to leave it dry but as it cooks it very juicy. To prepare this delicious dish you need to have the following ingredients at home:

  • ½ kilo of caraotas or black beans.
  • ½ kilo of smoked beans
  • Two heads of garlic
  • Two small onions
  • A sprig of chives
  • One sprig of cilantro or culantro
  • A branch of Chinese garlic
  • One stick of celery Spain
  • One medium red bell pepper
  • 6 sweet peppers
  • One teaspoon of baking soda
  • Pepper to taste
  • Salt and sugar
  • Bay leaf
  • Cumin to taste



Para su elaboración se deben realizar los siguientes pasos que a continuación se mencionan:

• En lo particular y para evitar concentración de gases yo particularmente remojo los granos la noche anterior a su preparación, cambio varias agua y las dejo en un bol remojando toda la noche, luego al siguiente día las cuelo usando un colador y las incorporo en la olla donde las voy a cocinar, allí incorporo la papeleta pequeña de bicarbonato de sodio, las hojas de laurel, sal al gusto, pimienta, ajíes. pedazos de ramas en grande para sancocharlas con ellas y desde su cocción agarren sabor, una cabeza de ajo picada por la mitad (entera), al incorporar estos ingrediente agrego agua y pongo a cocinar por un lapso de 10 minutos o hasta que las caraotas este flojas, en mi caso si las caraotas son flojas las apago unos minutos antes para evitar que se aflojen mucho.

• Posteriormente debo picar en pedacito muy pequeños las cebollas, ajíes, cebollín, apio España, cilantro o culantro, ajo chino, pimentón, pelar y machacar la otra cabeza de ajo y colocar todos los aliños en un bol picado; también debo picar en pedazos más pequeños los huesitos ahumados que en o0tras oportunidades que he realizado este plato los he incorporados juntos cuando pongo a cocinar las caraotas; sin embargo en esta oportunidad no lo hice así sino que los incorpore luego una vez que ya las caraotas estaban flojas.

• Luego de tener las caraotas lista y aliños listo , procedí a incorporar primero los huesos ahumados en la olla con las caraotas flojas y volví a encender la cocina a fuego lento, a parte en un sartén agregue aceite de maíz o de su preferencia para sofreír los aliños picados anteriormente, agrego un poco de comino, dos cucharadas de azúcar y un poco más de pimienta y una vez que los mismo están bien caramelizados los incorporo en las caraotas, agrego un poco de agua ya hervida previamente y dejos por un lapso de tiempo de 20 minutos y estará lista una vez su caldo este espeso y haya disminuido un poco, es decir que no queden secas. En este caso las mismas fueron acompañadas de arroz, tajadas de plátanos y aguacate.

In this case they were served with rice, sliced plantains and avocado.
