Dinner? Baked Pork Loin Chops with sweet potato Mash

I’m a sucker for anything that I can stick in the oven and leave for at least 30 minutes. This meal ticks all the boxes and is incredibly tasty!

I found some thin sliced Pork Loin Chops at the grocery store last week and pulled them out of the freezer this morning. A few years back I had experimented with pork chops and it had been such a success that I wanted to recreate that dish this evening.

I added a little twist to the old adage of Pork and apple sauce with this recipe.

INGREDIENTS

6 pork chops
6 heaped tablespoons Apricot jam
2/3 Onion sliced
2 small apples - pealed and sliced
Salt and pepper
Sweet potatoes (healthier option than regular potatoes)
2 Tbsp Butter

METHOD

Spray an oven proof casserole dish with non stick spray (I always do this to make cleaning faster).

Put your pork chops in the dish with the fatty edges up the sides of the dish. This helps the fat crisp faster while the meat stays soft.

Add a heaped tablespoon of Apricot jam on each chop and spread it. This becomes a lovely glaze.

Place the sliced onions and apples around and under the pork chops.

Sprinkle with salt and pepper and place in a preheated oven at 180C / 350F for about 45 mins. Time will depend on your oven so check at 45 mins and possibly leave a little longer to brown if needed.

While the pork chops cook, peel and chop your sweet potatoes. I boil my sweet potatoes in the microwave for 20 minutes and then strain them, add 2 tablespoons of butter, a little salt and pepper and mash them.

The combination of the pork with the sweet apricot jam, baked apple and sweet potato all work together beautifully!!!

It all disappeared so quickly that there is nothing left!

Happy family, happy life. I can’t wait to make this again.
