Foodie - Quick pasta time! Sausage, cheese sauce and cheddar cheese!

Every parent who works all day has at least one... or several good and easy meals that they can prepare quickly and even if they are tired.

A pasta with a nice spread of simple toppings and a cheese sauce... is definitely a go-to for me.

I need any sort of pasta, some sort of meat, preferably mince or deboned meat, onions, tomato and some packet sauce.

I was in the mood for cheese, so I got a cheddar cheese sauce.

So let's go through my process for making this meal!

Step 1 - Light Fry the Sausage

So I sort off with the sausage. A little bit of oil and I fry it up. A lot of the juice and the fat comes out of the sausage when you do it this way and if you do the sausage at the end then you have to throw all of that away. In that form, you cannot simply pour it on to your food. That would make it oily and disgusting. (The pasta is also on the stove at this point. I will assume everyone knows how to make pasta.)

However, you do the sausage first and then remove the sausage from the pan and set it aside to cool down. It would be good to mention that you do not need to cook the sausage completely at this point as the sausage will be going back into the pan soon.

First you dice your Onions…

And your Tomatoes.

Now, using the oil/lard from the sausage in the pan, you use this to fry up your onions first until they become see through. Then add the Tomatoes and cook this. The moisture from the vegetables and the acidity in the tomato all reduce the oiliness and the oils/fats reduce the acidity.

Once this is well cooked and mixed, I add a 250ml cheese sauce which is mixed in a jug. Adding it to the mix now means that the sauce can thicken and everything can absorb the sauce.

The Sausage gets chopped up into bits and also added to the sauce. Again, nice absorption occurs with all the sauces.

Finally it goes all together and then topped with cheese! And as usual, I forgot to take pictures of what it looks like in a bowl because it was so delicious and we were all hungry!
