Pizza time!

It’s not the weekend, but it feels like it — with guests staying at our place for the holidays & kiddies running around! So, why not, pizza?

Typically, my wife and I will prepare just one, but with 7 souls onboard, we decided on two.

The smaller one is without onion to accommodate one of our guests:

Otherwise, both pizzas have red peppers, baby spinach, garlic and grated Gouda cheese, alongside some Swiss 🧀

I added onion slices to the larger pizza and would have added broccoli 🥦 but we’ve been having that with our meals, these past couple of days.

Next step is to pop pies into preheated oven (410 degrees) for around half an hour, while checking in on it from time to time and rotating the pizzas —since one was partially covering the other in the oven.

This was our first time using Gouda cheese as a topping (a great melting cheese) but I probably won’t be using it again as it hardened after a while.

Typically, Parmesan and mozzarella are my go to toppings & I’d rate this pizza a solid 7 out of 10 👨🏻‍🍳
