It’s Taco 🌮 Weekend 🤩

Weekends are for having fun 🤩 And tacos qualify as a lighthearted treat. They’re a rainbow of color and represent all the food groups —from the brown of the meat, to the green of salad or avocado 🥑, white of the onions, yellow of the corn — it’s a party in your mouth!

So, instead of taking the heavy, predictable route of serving my left-over meat sauce & meatballs over pasta or rice, I took this whimsical Mexican vacation with blue corn tacos.

To make it breakfast-y, you could substitute the meat for (refried?) beans, alongside scrambled eggs and pickles.

Yellow corn tacos are, of course, the more common choice than the blue variety and just as good. Maybe, try adding chopped carrots 🥕 or sweet potatoes 🍠 for color and texture if you have them?

And, yesterday, I happened to have ripe plantains sitting around, so I popped those in the fryer for a delicious side:

Ah, the gooey, chewy deliciousness of S. America…

Dinner was an even simpler affair & no less delicious. Spinach and kale dip with Greek yogurt on top of a croissant 🥐 with a succulent, blood 🩸 red beefsteak tomato 🍅 & Greek olives (Kalamata)
