How To Make Nigerian Beans Meal : Moi-Moi

Beans is one very nutritious food that's a great source of protein, carbohydrates, potassium, calcium and sodium. It's predominantly cultivated and eaten in Nigeria because it is inexpensive and versatile.

There are different types of beans grown in Nigeria but the most eaten are the Lima beans (butter beans) and the Black Eyed Peas. We cook them whole with just salt, or spice it up with oil and other ingredients. It is also cooked until extremely soft and served as soup.

One of my favorite ways of eating beans is cooking it as Moi-moi which is making a paste out of uncooked beans and then cooking it until it cakes up.

Here's a not so quick quick way of making this beans meal.

RECIPE

First, soak 3 cups of beans in a bowl of water for 10 minutes. Scrub between your palms until all the shaft come off.

Blend until smooth in batches so as not to overload your blender.

Add some bell peppers and onion while blending.

After blending, add salt and seasoning cubes and stir the pudding thoroughly. Serve in cups or wrap in these leaves (Thaumatococcus daniellii) for the local effect.

Steam on the stove until all of the pudding cakes up.

Unwrap when it's ready and serve with a side dish or eat alone.
