Corn and cinnamon cookies free of gluten, sugar and dairy.

For me it's a pleasure to bake with others in mind, especially little ones with autistic syndrome, a mental health condition that can be improved by stopping the consumption of foods free of gluten, refined sugar and dairy products.

It is a proven reality, the absence of these elements in the body favors the proliferation of intestinal biota, a series of microorganisms or bacteria residing in our large intestines that generate positive substances that connect with our brain, which is why people with autistic syndrome are recommended to follow a style of food with these parameters.

Considering the above, today I want to share a recipe suitable for the whole family, easy to get ingredients and especially delicious: cinnamon cookies made with corn flour. It is a simple recipe, how to satisfy a craving to accompany the coffee or afternoon tea and just be happy with those little delicious things in life.

To make it easier to make this recipe, I indicate the quantities in terms of tablespoons, considering the fact that not all of us have these electronic scales that accurately calculate the weight in grams and ounces of the ingredients, the result will be the same.

Without further ado, let's start with the recipe:

Ingredients (for about 15 cookies):

  • 6 tablespoons of corn oil, soybean oil or the one of your preference (except olive oil because its flavor would overpower the cinnamon).

  • 5 tablespoons of the sweetener of your choice, I use granulated stevia but you can also use 100% pure honey.

  • One egg.

  • 200 grams (or 6 tablespoons) of corn flour. I use a yellow grain corn flour but white corn flour, polenta or corn starch is also valid.

  • 2 tablespoons of cinnamon (and if you like it a lot, add another one).

  • ½ tablespoon of salt.

  • 1 tablespoon of baking powder.

Procedure:

In a pot or container preferably steel or wood introduce the oil, egg and sweetener (stevia in my case). With a fork or whisk stir the mixture for several minutes, until a pale yellow tone is observed.

Add the dry ingredients (cornmeal, salt, baking powder and cinnamon. Mix until a uniform brown dough is formed.

Cover the bowl where the mixture was made or wrap in plastic wrap, then refrigerate for 1 hour before cutting out the dough and making the figures or shapes you want.

As you can see the recipe reached for approximately 15 cookies, do not worry about greasing the pan or cover it with paper, these cookies by their fat content will not stick to the tray.

Before introducing the cookies, preheat the oven for at least 20 minutes at 200°C, after that time, put the tray in the oven and bake for 10 minutes or until the edge of the cookies look a little golden brown. You will notice the delicious aroma of cinnamon permeate your whole house.

Remove the pan, let cool and when you notice the cookies harden carefully remove from the pan. Let stand at room temperature for 30 minutes to set, then enjoy with your favorite beverage or so, alone and guilt free.
