Hace dos años fui por primera vez, entonces recogí los granos de café de la tierra y de los árboles, no hay fotos porque las tomé con una cámara antigua y las fotos aún no han sido reveladas. Esta vez conseguí los granos ya secos, pero todos los pasos que hay detrás son la mitad del proceso para conseguir un buen café.
The roast, this is a very complicated step, because if we have done everything good to this point, we have a great bean, we don't want to mess it up, and we easily can, roasting it too little or too much.
When is too little or too much depends on the kind of bean and the flavor you want, but normally, for the taste we like here, the bean should be dark brown almost black.
El tostado, este es un paso muy complicado, ya que si hemos hecho todo bien hasta este punto, tenemos una alubia estupenda, no queremos estropearla, y fácilmente podemos, tostarla poco o demasiado.
Cuando es demasiado poco o demasiado depende del tipo de alubia y del sabor que queramos, pero normalmente, para el sabor que nos gusta aquí, la alubia debe ser de color marrón oscuro casi negro.

With more fire, you'll get different colors at the same time, but they will roast faster and at the end they get all the same tone. Because of the more roast the more flavor, as long as it's not burned, you'll be fine, but, if you freak out and take it off the fire too soon, it will taste like herbs, too light, maybe even a bad flavor, so it's better to cook too much and not too little.
Con más fuego, obtendrás diferentes colores al mismo tiempo, pero se tostarán más rápido y al final tendrán todos el mismo tono. Porque cuanto más se tueste más sabor tendrá, mientras no se queme, estará bien, pero, si te asustas y lo retiras del fuego demasiado pronto, tendrá un sabor a hierbas, demasiado ligero, quizás incluso un mal sabor, así que es mejor cocinar mucho y no poco
The whole process took about three hours, after that, we waited for it to cool down and, with the help of all the kind member of @yetsimar's family, we grind the now 4.5 kg of coffee (we started with 5.5), to get a fine powdered coffee, but not too fine, you have to see it like grains of sand.
