Banana cake

Being away from home for so long, suddenly today I feel terribly homesick. I remember the steamed bananas that my grandmother used to make for me when I was a child. I hope I can bring the recipe of my hometown dish to my family menu.
Steamed Banana Cake with Coconut Water - Back to childhood

MATERIAL:

  • Siamese banana: 500gr
  • Tapioca starch: 108g (customize the dose, guys)
  • Sugar: 25g
  • Salt: 5g
  • Turmeric powder for coloring: 2gr
  • Warm water: 120 ml
  • Coconut milk: 200ml
  • Rice flour: 10g
  • Vanilla
  • Water
  • Oil blotting paper or bowl for steaming
  • Cooking oil

Cake core:

1 - Peel bananas and soak them in a bowl of diluted salt water (5 minutes) and then drain them
2 - Cut the banana into circles and then pick it up and put it in a large bowl -> then add 100g of tapioca flour - 10 gr of sugar - 3g of salt - 2g of turmeric powder -> Slowly add 120 ml of warm water and stir until the mixture is thickened.
3 - Place absorbent paper in the mold and apply cooking oil all over the surface of the parchment paper or bowl. Arrange the banana pieces around the bottom of the mold and then put all the mixture into the mold to spread it out beautifully.
4 - Bring the pot of boiling water to boil for the mold to steam the cake (to prevent the cake from becoming mushy, take a clean towel and put it on the lid of the pot, steam the cake and then close the lid to prevent steam from falling).

Coconut sauce:

1 - While waiting for the cake to cook, take 10g of flour to boiling until the dough is cooked and then take it out. Next, mix 10g of rice flour - 8gr of tapioca starch into a bowl, beat with 20ml of water, and set aside. Bring the pot up for 200ml of coconut milk - 70ml of filtered water - 15gr of sugar - 2gr of salt to boil. When the coconut water has boiled, add the flour and stir
2 - Add the mixture (rice flour and tapioca flour) and beat until thickened and then add vanilla to create the fragrance
3 - When the cake is done, let it cool, put it on a cutting tray, and put it on a plate to decorate
