Camote Tops Salad

Camote or Sweet Potato is a widely popular and common root crop. Normally locals grow them in their backyards, any vacant lot or even roadsides.

This is the camote plant that grows in my backyard

It's root crop can be a substitute for rice since it's high in calories.

But today, I will be talking about its leaves. Yes, leaves! The sweet potato young leaves or talbos is as healthy as its crop. And now, I will make a healthy salad out of it.

Ingredients

Camote Tops
1 Onion (sliced)
1 ginger (minced)
2 tomatoes (sliced)
Vinegar
Salt or Bagoong ( preserved Salted anchovies)

A local vinegar made from coconut or sukang tuba and the Salted anchovies or bagoong

Procedure
Wash camote leaves and blanch for 10 seconds, put in a plate and mix the ingredients. Sprinkle salt to taste or tsp of Bagoong (optional)

See? It's so easy to prepare, it's inexpensive and very healthy too!

This is a appetizer commonly served in Filipino homes. But for me, it can already be a viand. Just pair it with warm rice... Yum!
