Ghiya/Lauki (Bottle Gourd) ki sabji is a commonly available green vegetable which is light to eat and easy to prepare. Obviously one can’t have heavy food every day. You need to have a balanced diet. This green vegetable is kind of a detox for me. Whenever I eat junk or heavy food, next day I prefer eating lauki because it is so light.
Since this is a detox food for me, I prefer adding bare minimum spices to it; although one can add different spices to make it tastier. But I personally like to keep it very simple and basic.
Although lauki is available throughout the year, it is recommended for consumption on summer season when it grows fresh. It is very soft in summers unlike the ones available in winter season. Making this lauki sabzi also does not take time and gets done quickly.

Method
Step 1: Take oil in a pressure cooker. Add Cumin seeds and let them roast.
Step 2: Add sliced onion and saute until brown. Don’t overcook.
Step 3: Add chopped tomatoes and give it a good mix.
Step 4: Now add salt, red chilli powder and turmeric powder. Mix well and allow it to cook for about 2-3 minutes on low flame.
Step 5: Add lauki (cut into small pieces) and again give it a good mix for about 2-3 minutes. Add 1/4th cup of water and cover the pressure cooker with lid and cook on low flame for about 10-12 minutes.
Step 6: Garnish with coriander leaves and serve hot with chapatis.
