Hello, today I bring you a recipe that is easy, somewhat uncommon but very tasty, which my family prepares from time to time....
That's right, as you read in the title, this is cold pasta, for this we need the following ingredients...
- Pollo
- Papa
- Zanahoria
- Huevos
- Mayonesa
- Aceite
- Pasta corta preferiblemente que sea pequeña, en mi caso utilizaré unas que se llaman "conchitas"
- Cilantro
- Vinagre
- Sal
- El ingrediente clave: Mucho Amor ❤️️

4. Eggs
5. Mayonnaise
6. Oil
7. Short pasta, preferably small, in my case I will use the ones called "conchitas".
8. Coriander
9. Vinegar
10. Salt

There are additional ingredients we can use such as: diced smoked ham, diced cheese, diced cheese, sweet corn and peas, but this time I will only use the ones I mentioned in the beginning...
So here we go, let's get to work....
First of all, we wash the vegetables and the eggs very well and we put them to cook in a pot with abundant water, on the other hand we put the chicken to cook with a touch of salt, because for this recipe we need larded chicken.
Once our vegetables are ready, we place them to cool and then peel and chop them into cubes or squares as you want to call it.
In the case of the egg, we will separate the yolk from the white (the yellow from the white), the white will be cut as well as the other vegetables, but the yolk will be left to prepare the dressing later.
Then we proceed to shred chicken.
Once we have this ready, we can store it in the refrigerator while we prepare the dressing and the pasta cooks.
For the dressing we will need the egg yolks, we place them in a bowl or deep dish, with a fork we crush them and add salt to taste, a splash of oil, vinegar and mayonnaise, mix until everything is compacted and takes liquid form should look like this
Once we have everything ready, the final moment has arrived, we join all the ingredients including the paste and we mix it in an enveloping way, we chop a little bit of coriander, we add it and we mix it for the last time.
To achieve a better concentration of flavors, you can let it cool in the refrigerator, of course in a well-sealed container for a few more minutes, this is up to your preference, in my case I let it cool for about thirty (30) minutes.
It was time to serve and this was the result of our lunch today.
The truth is a delicious dish and the best thing is that you can make it in quantity if you want to save it for the next day and absolutely nothing will happen, in fact some people may even find it richer, so it is not because I have made it, but I invite you to make it and try it because you will not regret it for sure.
