Fish Barbeque Sunday

A really good friend of mine invited me yesterday to his vacation home to have a barbecue, but this time it wasn't meat, but fish. Vaggos is a really good fisherman; he loves going out and fishing at least twice a week. He has made it his life's purpose to gather enough money to buy a big boat that can accommodate sleeping arrangements and start making a living out of fishing. Well, he already is, because he catches some really huge fish that are hard to come by. So, he has secured a decent income by turning his passion and hobby into a money-making venture

So yesterday he had kept 2 fishes for barbeque dentex or sea beam in Greece we call it sinagrida that was around 3.7 kilos and it is a perfect fish to barbeque on an open fire. This fish is sold for 45 euros per kilo

And a sailfin grouper or just grouper that was around 2 kilos that is perfect to make a fish soup out of it because of its huge head and really tasty meat. This fish is sold for 50 euros per kilo.

The prices are high because those fishes can only be found in the open sea.

Now for the cooking . My friend has a wooden barbeque over so he started preparing the fire and when the oven reached 300 degrees celcius we knew it was ready to go.

As i wrote the dentex was barbequed on the rack but for the grouper we had some special treatment . We putter it inside an oven pan filled half with water lot of salt , pepper , lot of garlic and potatoes and the covered it with aluminum foil and put it in the wood oven along side the dentex.

The dentex was ready in 50 minutes so we started eating that just before we finished eating it the grouper was also ready but not quite ready we took out the juices that was inside the pan and put it in a pot and started cooking it because we wanted to create a more concentrated broth with richer flavor !
The one thing i must say is that it was fucking delicious !!!
