Papaya in Coconut milk

A Dish that is cooked in coconut milk always wins my heart. So Today, let's cook Green Papaya in coconut milk. It is one of my favorite vegan dish. Healthy and simple.

Ingredients

Garlic
Onion
Green or Unripe papaya, sliced
Coconut milk, fresh or in can
Moringa leaves, optional
Sweet potato leaves, optional
Salt
Pepper

Preparations

  1. Heat the pan and add oil.

  2. Saute onion and garlic until soft and aromatic.

  3. Drop in the coconut milk. Let it boil then reduce to low heat.

  4. Add the sliced papaya and stir to combine. Cover with lid and simmer for 15 minutes.

  5. Season with salt and pepper.

  6. Add the leaves if using, turn off the heat and serve warm.

Avoid overcooking the papaya, it should be firm as possible to make an excellent taste.
