Hello everyone! This is my first time in this community and I wanted to show you something that I like to eat very often, these are the Venezuelan empanadas.
Just yesterday my grandmother told me she wanted them for dinner and I really craved them because this time she told me to fill them with eggplant cream and grated mortadella, I had never made this combination before and it is very tasty. However, you can put any filling you want, in the state where I live you see a lot of empanadas with shredded meat (basically thin strips of meat), shredded chicken (the same as the meat), shredded fish, grated cheese and even pabellon (meat, beans, fried plantain and optional cheese). That's what I love most about empanadas, they have different fillings to suit everyone's tastes, now I'll show you how I made them, I hope you like them!

Ingredientes. // Ingredients.

// The ones I used to make 6 empanadas, the measures change depending on the quantity and size that each person wants.

  • 2 cucharadas grandes de harina de trigo.

  • 1 cucharada de azúcar.

  • Sal al gusto.

  • Agua.

Proceso. // Process.

Place all the ingredients in the bowl and mix them with a spoon to remove all the lumps so that everything is well blended.

We add the water, usually the amount of water depends on the amount of corn flour; that is, 1 cup of corn flour equals 1 cup of water. Of course, it depends on the brand of flour, but in this case decide if it is missing while kneading.

Knead your flour by uniting all the ingredients. You should have a dough more or less like this.

Now divide the dough into the number of empanadas you are going to make, in my case there were 6.

Proceed to make a small ball to flatten it until it looks like this. Not too thin to prevent them from breaking and not too thick because you feel too much dough when you eat them. I use a tool that my grandmother has had for a long time, I don't know what it's called, but it helps me to flatten my balls perfectly. Also, here we use to put paper bags under the dough so it doesn't stick to our work table.

Place the filling in one of the empanada halves, as shown in the photo. If the filling is too much in the center, when you close the empanada, everything will remain there, and if it is too much on the edge, the center will remain alone and may make it difficult to close the empanada.

Close the empanada taking it from the two corners of the bag, so we do not touch the dough and it is easier, then give light touches of pressure on the edges so that they are well closed and the filling does not come out when frying.

When the oil is hot, place your empanada. As you can see, it is not an excessive amount, although it depends on the taste of each person, I use little because I can not exceed the amount of fat, but they still fry very well.

The cooking time on that side depends on how your empanada is, I don't have an exact time, I just start making another one and, when I finish it, I wait 1 minute and flip my empanada since I make them by myself. You can also notice when the edges look golden brown, that's when you know it's time to flip them. As you can see, I was making two at a time, so it takes less time.

Remove them from the pan and voilà, ready to eat.

Anyway, this is how I make my empanadas, I hope you liked them and I invite you to make some, they are really easy and tasty, you can also serve them with any sauce you like, see you later! But before...

Tips de emergencia. // Emergency tips.

  • If the dough has too much water in it, it is prone to break, I recommend adding more flour.

  • If the dough is too hard, it will break when stretched. Add water until it is well, otherwise, by having your little balls you can wet your hands and knead it quickly individually, it saves the work of kneading all over again, so you make time like me while some of them are cooking.

  • Do not use very liquid fillings because they moisten the dough and it can break.

  • Always remember the bags so that they do not stick, they can be of any type.

  • Be careful when frying, the oil splashes if you spill even a little filling, be forewarned.

  • You can flip the empanadas with a fork or a spatula, whichever is more comfortable.
